I'm having chickpea and spinach stew with bits of feta crumbled in and nice crusty seeded bread

Fried mackerel, tomato salad and sautéed spinach. All served with potato, onion and peppers roasted in the oven. Quick and easy.

Sausage and gochujang pasta from Mob kitchen and a glass of wine.

This all sounds amazing. Keeping it very simple here with Waitrose jumbo haddock fish fingers with potato wedges and peas. It’s been a busy day of Mum’s Taxi at the end of an exhausting week. I’m making a beef casserole from scratch with roast potatoes and veg tomorrow though.

We're going out for a Thai meal - a very rare occurrence. Thai green chicken curry is straightforward to make at home if you use a paste, from memory you need to fry an onion, add cubed chicken, the paste, coconut milk & later any vegetables. Serve with boiled rice.
