If having rice I chop it and chuck it in the rice cooker so that it gets steamed.

Otherwise roasted with Brussel sprouts and then sprinkle some pomegranate on it. - Best thing I've ever eaten (in the Imperial War Museum of all places)

Listen, the only way to cook broccoli is pretty simple.

Put on a pan.
Lightly salt it.
Bring it to the boil.
Place broccoli on chopping board.
Using a sharp knife, dial pizza hut, throw broccoli away and use the lightly salted water to scrub your floors.
This is the tastiest way, trust me.

🤣

cut into the bits people will find acceptable on their plates. Add to pan. Put a bit of water in (just enough to make it sound like it's going to boil dry when it's done). Bring to boil and then continue to bubble until it's either
a) warm and stem is very crunchy still (that's how I like it)
b) cooked so you can actually put a fork in the stem parts and the green is much darker.

Either way it's good for you. I have discovered the frozen stuff is good if you like it cooked through.

I'd only ever had it boiled or steamed til I ate at someone's house and they'd roast it with lemon zest and seasalt! Soooo good!

Roasted with panko breadcrumbs, garlic and parmesan cheese is to die for 🤤

You're probably eating it wrong too. The best part is the stem. Cut off the florets and eat those as normal, but then 'shave' the stem so only the white inner bit is left and eat that raw.

You'll thank me :)

My husband wouldn't 💨💨💨 😂

I made broccoli and cheese soup in my slow cooker today. I chopped it all up, including the stalk, bung it in the slow cooker, add a chopped leek, onion, grated carrot, garlic, and vegetable stock, and cook on high for 4 hours. Then, stir in some grated cheese and thick Greek yoghurt and blend with a stick blender. This is the First time I have made it, and it is bloody gorgeous, even though I say so myself.

Sounds good but that would do in my soup maker in 19 minutes smooth or under 25 minutes for chunky.

AdaColeman · 02/11/2024 21:29

I cut up the stem into very thin slices and fry with the florets together with anchovies, garlic and lemon, delicious!

Will have to try this!

Melt a very large knob of butter in a frying pan. Add 2 tsp mustard seeds. Add broccoli florets and peeled stem (or cauliflower florets, or Brussels sprouts). Stir fry for a minute, then add about 3/4 inch boiling water and pinch salt and cover. Cook until veg is half done, then uncover and boil off the water so veg is fully done and slightly burnt ( or charred as restaurants call it these days)

ChallahPlaiter · 02/11/2024 21:35

I cook it like this if I’m making broccoli rarebit - cook the whole head in boiling water 5 mins, put into cold water while I make a sauce with butter, spoon of flour, some cider & cheddar (plus mustard and a little bit of mild chilli powder). Put the broccoli in an oven dish, pour the sauce over, sprinkle a handful of chopped walnuts & into the oven for 15 mins. Amazing!

Do you have to grate the carrot though

weareallcats · 02/11/2024 21:37

Anyone who boils it is doing it wrong - roasted is the only way.

SeaToSki · 02/11/2024 21:40

If you roast it, it gets lovely and soft, but not mushy..I throw some olive oil, salt and pepper on it for extra flavour

When I boil it, I let it go for 3 mins once Ive chucked it in, otherwise it just goes mushy and all the flower bits fall off (v sad)

Its great in soups

Ive had it on a pizza and it was surprisingly good

Its great with basically any thing added to it

Its super healthy

Its low cal

I can even persuade my dc to eat it by calling it trees!

I assume the stalk will still be tough when the head is falling to pieces.

No, you make a couple of incisions in the stalk. It works OK to boi or steam. Drain well because it is quite wet, that's especially important if you make a cheese sauce to pour on, and then put in oven. Lovely. I like purple sprouting brocolli

I always just chop it in about 8 and boil in microwave for 5 mins. Pretty easy and tasty.

I wish. My DP like cauliflower, I would if I could!

It's the same plant though, so can't see why not!

Doesn't like*

Mumandcarer80 · 02/11/2024 21:43

No it's not I chop mine up before cooking. I only submerge the stalk I like it practically raw. So the head is mainly steamed rather than boiled. Can't stand over cooked broccoli.

EdithBond · 02/11/2024 21:47

I steam broccoli til soft but still firm. Cut into bite size florets first, then julienne the stalk. Steam it with whatever other veg we’re having: julienned carrots, sweetcorn, sprouts etc. Then pop in a lidded dish with butter and seasoning.

I feel I'm back at my mother's house reading this, she liked everything 'well cooked', I recall her cooking a beautiful joint of sirloin until it was like corned beef, I could have wept. Most non-root vegetables are steamed here and even root vegetables are still a bit crunchy. Oddly enough my mother always said how much she like the vegetables at our house while still boiling stuff to death at her house!

Keepingitmoving · 02/11/2024 21:49

roasted with a little salt and garlic over the broccoli is delicious!

JuliaLivilla · 02/11/2024 21:51

I have been using broccoli 'rice' (plus cauliflower or carrot 'rice', or combinations) for a while. Cooks easily in the microwave, retains a good texture, I can tell - and even convince - myself it's quite nutritious, and I much prefer it to white rice with various things. But, I have never been much of a fan of white rice.

WagnersFourthSymphony · 02/11/2024 21:51

Prefer tenderstem myself but if I have a head of broccoli I cut it up before kinda steaming, and yes, in our house we are on the al dente side of things.
But obvs not gourmets.

My mother in law always over cooked veg. I once took a forkful of what I thought was mashed potato, turned out to be cauliflower!

Still worth going for a roast though as her meat, gravy and roasties were always absolutely amazing!
