What do you do with leftover roast chicken?

Not the most scintillating of topics, granted!

I have a very great deal of roast chicken left. Usually I do chicken noodle soup or creamy chicken pancakes. Or a simple creamy chicken pasta. I'd love some other ideas as my creativity is a bit lacking right now!

If it's a MN chicken you can feed a family of strapping rugby players with it for a week, including lunches.

I either stick it on a butty with plenty of salt and mayo, or stick it in a curry for an easy meal.

It almost is a MN chicken. DH is vegetarian, DS1 decided he wasn't eating after a sneaky McDonalds and DS2 has a small appetite anyway. So there is 3/4 left!

I like the idea of biryani.

Chicken and leek pie - fry up onion, celery, leek, add flour then milk and a bit of stock to make a white sauce. Add chicken, and mustard for flavour. Use puff pastry for lid.

Thai chicken curry - fry up red onion, red pepper, mange tout, baby corn, add Thai curry paste, then coconut milk and the chicken.

I use the breast meat for sandwiches, the rest gets used by my sons for sandwiches or some form of curry. If it doesn't get used within a couple of days I freeze it and once there is enough in the freezer do a chicken & leek pie instead of roast chicken.

One of my favourite weekend rituals growing up was having a chicken roast for lunch and then cold chicken sandwiches for dinner- I might have to restart this!

Yawn. Making a chicken last more than one meal is the traditional way to do it, since way before MN or even the internet.

This was covered in the Kitchen Cabinet on Radio 4 just the other day, about 2.5 minutes in.

For the OP, I like a 'taco soup'. Leftover roast chicken, stock, peppers, onions and tinned black beans, tomatoes and sweet corn and spices (chilli, coriander and cumin?) and garnish with fresh coriander, avocado and tortilla chips. You could even make it without the chicken so DH can eat it then heat some up with chicken in for the meat eaters.
