What did you have for dinner last night?

I've been watching Mr Selfridge and in the breakfast scenes they usually have,eggs, bacon and tomato, toast/tea. So last night dh made that for our dinner (I added hp brown sauce to mine 😋) it was amazing!

What did you have for dinner last night?

this is in no way a sneaky way to get dinner ideas

Yesterday was hot honey pork belly with rice and tender stem broccoli.

Tonight we've got fried chicken, mashed potatoes, beans and cauliflower. Not inspired at all, our children are fussy and annoying.

Well so far tonight I've had a packet of quavers. Just popped baked potatoes in the oven, will have them with salad, cheese and colslaw.

My just turned 16 year old cooked for us for the second time ever and it was a big success. He had no help at all, very impressive. He followed a recipe from the book What's for Dinner? By Sarah Rossi which I highly recommend, especially for quick/easy/delicious. I've made so much from it. He made the baked risotto with a kind of paella influence/flavour 😋

Well to be honest it's the most casual recipe but it seems to work!

I keep a glass topped up with organic flour and water and let it bubble away, then to make bread, add approx 350g starter, 500g flour, 250-300g water (I just do it by weight to rinse the starter out) and a TSP sea salt. Mix, cover and leave overnight then flour a tin, transfer and leave (in a cold oven if it's free) until it's been 24h in total.

I experimented with kneading and it makes no difference if well proven. A few mins max to combine. You can add seeds but I add at the end. Wholewheat or malt flour works well or a combo but will be heavier. Bake at 200 preheated with a tin of water in the bottom of the oven. Check after 30 mins as may need turning depending if any big peaks but usually takes about 45 mins.

To start the sourdough itself, just get a bag of organic flour (gets going quicker, I find) add a couple of tablespoons to a big jar or water every couple of days, adding more water until it's full. Don't keep in the light. It will start smelling yeasty and eventually bubbling. A lot of recipes are very complicated and you have to throw it away etc but I don't think you do, just keep adding, pour away any liquid (it can smell a bit tangy but that's ok) and feed it as often as you remember

A large bowl of panzanella salad (cucumber, tomatoes, bell pepper, onion and capers with dry bread, all soaked in garlic mustard vinaigrette) and some tuna fillets from a jar.

Due to COL the olive oil from the tuna went into the vinaigrette (it took me 30 years to work that one out!).

Followed by defrosted mixed berries, crushed biscuits and whipped cream.

I only had myself to please and I really enjoyed it.

Baked pork loin with side of hot spiral pasta mixed with ranch flavoured yogurt sauce
