Chicken schnitzel with garlic roast baby potatoes and Caesar salad.

Judystilldreamsofhorses · 04/09/2024 16:29

Last night was sausages, mash, peas and gravy. Tonight is quiche, jacket potatoes and salad.

We often have brinner on a Friday night here - but always with Birds Eye potato waffles instead of toast.

I felt a bit under the weather last night, so “dinner” for husband and I was crispy bacon in a nice soft, floury roll. Mine had a big squirt of brown sauce on it, and was altogether lovely. Judging by the speed at which husband demolished his, he liked it too.

Last night I made tapas (chili and garlic prawns (gambas pil pil), meatballs in a spicy sauce (albondigas), spicy potatoes (patatas bravas) and roasted red peppers (pimientos asados)) as everyone else is sick so thought something warming and spicy that they could pick at would help. It did take 2 hours to make and I kind of wish I hadn't started it half way through making the meatballs 😫

Tonight, not sure, maybe roast chicken with Greek salad and sweet potato fries

Bringbackspring · 04/09/2024 16:41

I made red lentil and sweet potato dhal using a Tesco magazine recipe. It's really nice and quite easy.

Felt good to cook something properly as we've had a lot of visitors lately so lots of takeaways and eating out, which is nice but the novelty wears off after a while.

KimKardashiansLostEarring · 04/09/2024 16:41

Kids had meatballs, mash, tomato sauce although of course barely ate it.
DH had an old, vegan, gluten free pizza from the freezer poor bugger.
I had olives, cream cheese stuffed chillies (am addicted), cucumber, Spanish omelette etc

Was meant to be sandwiches etc for the kids tonight and Deliveroo for us, but an unexpected HelloFresh has turned up and given me the rage - always fucking mince!! Mince mince mince. I have now cancelled it, thought I already had!!

We had humble jacket potatoes for tea last night, but they were so very delicious.
Crispy salty skins and soft & buttery on the inside, loaded with grated cheese, red pepper, tomato, cucumber, red onion, some S&P, mixed with a bit of mayo.

I had vegetarian Shepherd’s pie: lentils, tomatoes, mushrooms, carrots and onions, topped with a potato, celeriac and butter-bean mash. It was the last of a batch I made for the freezer several weeks ago. I need to make more!

I did not opt for that apostrophe. It auto-corrected to it!

FranksInvisibleLlama · 04/09/2024 17:28

We had vegetable enchiladas.
Today our dinner plans changed at the last minute so we are having Things Out The Freezer, so chicken nuggets or fish fingers or whatever else DC can find, veg and frozen potato products (oven chips or waffles). I will have the saag paneer I forgot to take to work today and some mini vegetable samosas.
