Tell me your simple, delicious meals because I am totally useless at cooking a decent meal

I'm basically atrocious. I buy crap such as breaded chicken, fish fingers and chicken nuggets. Usually with either baked beans or steamed veg. I just can't seem to get the energy or enthusiasm to get a decent meal. I don't like spicy food. Hate rice. Mash spuds are all I can do.

Another nice salmon dish and very easy, mix one tablespoon of soy sauce and one tablespoon of honey, season and pour over salmon. Cover with foil and bake for 18 mins. I serve with roasted sweet potato and broccoli. I add chilli flakes to my salmon too before cooking but don’t for my son

Soup
2 Leeks (top and tail, then slice up through top third and rinse under tap in case soil in between leaves) chopped across
1 onion chopped
2 carrots chunky
Celery if you have some chopped finely
Kale if you have some chopped finely
Orange lentils about half a cup.
one or one and a half ham stock cubes, water to barely cover veg
Cook half an hour, liquidise carrots with hand held chopper.
done. Or you can grate the carrot so don't need chopper.
You can add the shredded ham you get in small packs in tesco. And other veg if you want - turnip (takes longer to cook), potato, left over lettuce etc

Very simple one pot meal my lot love:
Cook chopped chorizo in a deep pan with a lid until the oil comes out.
Add roughly chopped onions and red pepper and let them soften.
Add chopped garlic.
Add chicken thighs cut into bitesize pieces and cook until brown all over
Add orzo (small pasta that looks like rice) or rice
Add mixed herbs, chopped sundried tomatoes and stock (chicken or vegetable). Season, cover and leave on a low heat for 30-40 mins until the pasta or rice and chicken is cooked.

Honestly in the summer we basically have Greek salad every week night with fish or chicken with flat bread or pittas and hummous. We never get tired of it for some reason and it's so easy. In the winter we often have jacket potatoes with sausages and beans or jackets with salmon and brocolli. We also do spag Bol in the slow cooker which lasts two nights or meatballs with spaghetti.
