Tell me your simple, delicious meals because I am totally useless at cooking a decent meal

I'm basically atrocious. I buy crap such as breaded chicken, fish fingers and chicken nuggets. Usually with either baked beans or steamed veg. I just can't seem to get the energy or enthusiasm to get a decent meal. I don't like spicy food. Hate rice. Mash spuds are all I can do.

For a healthy tea i usually do salt and pepper chicken breast with peppers, onion and rice

Simply Cook! I've tried all sorts - Gousto, Hello Fresh etc but this is the one I've stuck to. Really simple, tasty recipes and easy to swap ingredients if you're not keen on something. Most recipes take 25-30 mins to cook.

I really like nosh for busy mums and dads.

If you can do mash then you're halfway to fish pie, shepherds pie and cottage pie.

I would really recommend Gousto or Mindful Chef to get you motivated and take some of the pain out of it all. We use it sometimes when we’re in a rut. All ingredients are there and no waste.

Three words - BBC good food. Their online recipes are great.

Also the other day I watched a Delia Smith clip recommended on twitter, and learned how to make an omelette properly. I've made loads since. It does take having the right pan, but it's as simple and good as it is possible to have. I'll find the link.

Stuff boneless chicken thighs with Stilton cheese and wrap a piece of bacon round and cook in the oven. Serve with potatoes of your choice and some fresh veg easy peas.

One thing I have been making a lot of recently is a vegetable soup. It's easy to make, tastes lovely and is very filling too.

1-2 carrots diced
1-2 celery sticks diced
1 onion
1 leek (sometimes leave out)
1 potato (again sometimes leave out)
4-5 cloves of garlic
1 red pepper or if I have half a red and half an orange or yellow one I use both
Mushrooms
Paprika
Parsley
Chicken or veg stock

Sauté all the veg, in butter. I put the garlic and mushrooms in once the rest of the veg has softened. Add in paprika and parsley. I just eyeball it. Then instead of mixing the stock cube in boiling water I crumble the stock cube over the veg. Give it a good mix and then add the boiling water. Bring to the boil and then simmer for 15-20 mins. You can use a stick blender for the next part. I don't have one so I take out most of the veg and about a ladle full of liquid and add it to my blender. Purée it on short bursts and then tip it back into the pan of soup. That way it thickens it but there's still a liquid consistency from the non puréed part and some chunks of veg in it as well

Sausage pasta is a fave here. Cut 2 thick sausages per person into chunks with scissors. Fry in a deepish pan in oil until brown. Add a chopped onion and fry that until soft. Add a can of chopped tomatoes, a tea spoon of chilli powder and a splash of Worcestershire sauce.
Then cook pasta, drain, add to sausage mix and stir together.
Serve with Grated cheese.
Quick, easy and delicious..

How so? It's just whisking up eggs and putting it in a hot pan with a bit of butter until it looks like an omelette.

I've just started using Cherrypick. Easy recipes mainly and you can just add all the ingredients to your shop.

Oh and also we use a 4 week rotation. We print out the plan and put it in the dining room. We have about four new meals each month, though this month the turkey burgers are a repeat that were popular.

My best basic recipe is... Pasta Bake even DS(14) can cook it.

Just boil a bag of any shape Pasta.

Get some pasata mix in a table spoon of vegetable oil, add similar amount of tomato puree & season with pepper and mix well.
Drain the pasta, place in baking dish poor over the passata mix well then sprinkle with cheese and bake for around 25 minutes.

You can add extra Herbs and spices like rosemary, Smoked Paprika, mixed herbs... or add some chopped & fried bacon, peppers, onions...

I can cook but I don't gave time, money or inclination this month.

A video popped up on Facebook and I just fancied it. So easy ( it's essentially a reworked jacket potato with topping.)

Boil potatoes in their skin. Crush them into a pie/ flan/ cake tin like you would pastry. Chuck in a tub of crème fraiche, a bit of sliced onion and bacon and top with cheese. Bung in an oven for bit. Ta dah! A healthy easy quiche.

Those asking about poached eggs… There are two tricks.

Use a deep wide based pan and don’t have it furiously boiling, just nice gentle hot bubbles

Crack the egg into a ramekin first and gently does it. Do not ever crack the egg straight into the pan. The reason for this is that the steam coming out of the pan makes you break it from too high a height and the egg doesn’t stay compact. By putting it in a ramekin first you can just slip it at surface height into the water. It’s much calmer for the egg which will then poach beautifully. It’s a game changer.
