I’ve just been to Tesco and got everything. My meal plan below - lots of summery food 🙂 Tell me what you are having? I love a meal plan thread

Leek and cheddar orzotto
Wraps with tempura prawns, avocado, rocket
Bean quesadillas with lime butter sweet corn
Roast chicken with wild rice salad and tenderstem broccoli
Left over chicken and rice somehow
Tomato and roast pepper pasta sauce on fusilli
Cheesy beans on toast

Puddings: strawberries and cream, Greek yogurt with blueberries and honey, ginger cake with Greek yogurt

Also to make: homemade nut and coconut granola, courgette and cheese muffins for lunchboxes

Love these threads! That all sounds delicious. I'm on for inspiration and healthy meals after indulgent holiday. A couple of my fave garden dinners are Panzanella, king prawn and chorizo stew, Greek bowls with Cous Cous, feta or halloumi, leftover veg roasted, garlic or mint yoghurt

Oh do you know I haven’t done roast veg for ages. Roast veg with cous cous and halloumi sounds amazing

I didn't know either but it's amazing, great for a side too. For your leftover roast chicken you could make American Chicken Salad, lovely for lunch too on a rivita. Check out American style broccoli salad too

We have a ninja outdoor oven, so trying to cook outside more.

We are having homemade pizza, a chicken potato salad, ribs, spaghetti Bolognese, chicken parmigiana. That's all so far

Tuesday - jacket potatoes with tuna and sweetcorn mayo and salad

Wednesday - cajun halloumi rigatoni

Thursday - pea and chorizo frittata

Friday - walnut, brown butter and sage pasta

Saturday - greek flatbreads with piri piri chicken, salad and mint yoghurt

Sunday - ploughmans lunch

BBQ chicken burger with homemade fries

Creamy mustard salmon with potatoes and broccoli

Can you tell I have a glut of salmon and chicken fillets in the freezer?!

Probably some sort of pea and bacon pasta dish too. And tonight is a giant t bone steak with chips

I want all of this

I don’t think my sons would eat the walnut pasta which is a shame as that is exactly the sort of thing I love

flatbreads is an excellent shout for dinner in the garden

Bloody DS2 won’t eat salmon so I never cook it. Wee git

We're also having halloumi, roasted veg and couscous! Love it this time of year.

Also: marinated chicken and blueberry salad (an old m&S recipe) and chilli (request from DH) which we will have for 2 nights

Puddings will just be fruit and greek yogurt

We have a couple of meals out planned for the week, so short and sweet this week!

That sounds awesome! Only thing I'm not into is pasta. I love the idea of courgette muffins, could you share the recipe?

I'm pretty spontaneous with meals so don't really do planning, I kind of fantasies about something then keep eating it.

I fancy a supermarket veggie pizza today. Might make a flatbread one.
And definitely prawns in the next few days...

The muffin recipe is just a Tesco one that I’ve done for the lunchboxes for ages. Only thing I do different is I add half a teaspoon of salt and often half cheddar half Parmesan

Sunday - Moroccan (lamb mince) stuffed aubergine
Monday - Beef, broccoli and beansprout stir-fry
Tuesday - Moroccan meatballs (using rest of the lamb mince)
Wednesday - Shakshuka
Thursday - Chicken korma (homemade)
Friday - Salmon with greek salad and pearl barley tabouleh
Saturday - Sausage traybake (Martha Collison recipe - it’s amazing)

Not particularly exciting, but I have the same thing pretty much every week!

My OH is very fussy otherwise I'd be having lots of the lovely summery dishes above.

Ooooh sounds lush! I love threads like this too (although baffled by the first response 😆)

We've got loads of summery stuff and it's just started fecking raining again but I'm doing it anyway

  • Mango chicken salad
  • Mediterranean veggie tray bake with sea bass
  • Vietnamese style claypot cod (ca kho to)
  • Courgette and lemon risotto
  • Lamb, spinach and feta spanakopita
  • Pulled chicken tinga tacos

And Saturday night is always "filth night" where one of us gets to pick our filthy meal that throws calories, carbs and caution to the wind - so it's french dip sandwiches tonight.
