It looks a bit weird - where's the juices? With a middle that pale I'd expect it to be haemorrhaging everywhere.

I actually thought it was tuna at first glance. In which case I'd probably give it a quick blast (because the middle's always less done than the edges). As beef I prefer it more done - there's a point at which the fibres knit slightly iyswim, and I don't like it before that.

Looks rank I'm afraid, and not because it's a bit pink, I always have mine rare or medium rare but it hasn't been cooked in a hot enough pan. Steak should have lovely sear on the outside and juicy, bright pink centre, not be grey and stringy 🤢

much better yes.

the way to get a good sear is
(a) leave beef out for at least 1 hrs before cooking so it's at room temp
(b) dry the beef really well. I use paper towels to dry and then leave it out to air dry. some air dry their beef in the fridge people for a couple of days for best effect
(c) make the pan really smoking hot. and put the oil on the beef, not the pan. add butter towards the end
(d) rest the beef well. normally steak that size I rest at least 15 minutes

It looks like the pan wasn't hot enough. I like it much more seared on the outside but rarer than that on the inside.

The first photo looks to have been warmed for too long - so it’s overcooked, but not properly seared on the outside for flavour.

Get the pan properly hot, and oil the steak, not the pan. Put the steak in the pan, and don’t be tempted to shuffle it around - just let it sit. When ready, flip it over, and do the other side.

if you can be bothered, sous vide gets quite good results.

I like my steak blue, but cannot quite work out how this one is cooked it looks a bit odd and like someone just bit a chunk out of it.

First one looks like pork. It’s oddly anaemic and looks like it’s been gently warmed rather than cooked.
