What sandwiches would you expect on a buffet?

I'm hosting a get together next weekend and doing all of the food. I have many things on the menu but I need to do a couple of platters of sandwiches.
What would you do?
No veggies or dietary requirements just half the people are very fussy.
I want to do beef, rocket, horseradish and mozzarella tomato and pesto, new york deli etc as I am a good cook, put a lovely spread on and the thought of plain ham makes me puke tbh.
So what do the fussy guys expect?
Is it fair to do a platter as above and also a plain one, one slice of ham, beef or cheese only, no sauce, no salad?

A plain hard cheese.

If you are catering for "very fussy" guests can't you ask them before you serve up platters of food they won't eat?

I would be gutted with your choices unless they were on kind of ciabatta type rolls and not normal bread… and actually dislike beef and horseradish sorry!
I love egg and cress, tuna mayo, not a cheese fan but ham and tomato is okay… chicken and sweetcorn or coronation chicken.
What about a pesto pasta salad?

Or provide the means for them to self assemble sandwiches of their choice.

Or do jacket potatoes with a choice of self-selected fillings instead.

You have to have egg and cress. Pesto in a sandwich sounds a bit 🤢 - too rich.

Nothing nicer than a simple cheese and tomato sandwich - butter, good cheese and quality toms with a sprinkle of salt. Mwha 😙👌🏼

But actually I wouldn’t pander to fussiness - your sandwiches sound lovely and grown ups should be able to cope with a bit of pesto or horseradish!

I’d just do one platter of very plain sandwiches (ham, cheese and ham & cheese) with no mayo or sauces and then the fancy platter that you want to do.

I would have no sandwich expectations of a buffet.

In what way are they fussy? If you mean they only like plain stuff then I’d do some chicken / salad, cheese / tomato, egg / cress. The beef sounds great. Mozzarella is a bit strange in a sandwich, I’d leave that for the salad.

That's nice, but the point of hosting is to give your guests food they will eat and enjoy - not what you will enjoy making the most.

It won't be a lovely spread to them if they don't want to eat any of it.

You can't beat a cheese savory - grated extra mature cheddar, diced red pepper and some form of diced onion (shallot, yellow, red, spring any will work) then a healthy grind of pepper, pinch of salt and bring it all together with a dollop of mayo.

Not a fussy eater in the slightest, but I love the classics you get in the M&S platters for adults and kids

Ham, cheese, prawn mayo, cheese & onion mayo, tuna mayo with sweetcorn, chicken salad and BLT

I think yours sound really nice, I usually hate sandwiches in a buffet but I like nice ones. A plain one that is pretty nice is cheddar and celery.

I agree mozzarella isn't the nicest on a cold sandwich, what about a good strong cheddar or a local cheese and a quality chutney instead?

I love Wensleydale and beetroot salsa with watercress or rocket

Smoked salmon and cream cheese maybe with some dill and gherkin dressing

In what sense are they fussy? If they only like plain food then go with that- plain cheese, ham, beef, egg mayonnaise, tuna

Good bread will make the difference

When you say fussy what are we working with here? Dietary requirements. Allergies. Or people with sensory issues? Or just people who like a plain ish sandwich

I would like the following-

beef and horseradish
smoked salmon and cream cheese
cheddar with pickle
prawn mayonaise
egg mayo

And plain cheese for the fussy 😂

For the love of God do at least one without mayo, I fecking hate the stuff 🤮and always have trouble with a supermarket sarnie! I know people use it so they don’t have to butter the bread but it’s vile… 😂

I love jam sandwiches personally. Not just boring old strawberry - but I'd love ones made with those fancy jams you find at places like National Trust gift shops.
But no one ever thinks to make jam sandwiches for adults 🙁
Seriously.... maybe have (as suggested upthread) a "make your own" style buffet.
Lots of bread and all sorts of different foods and things to put in them.

What I expect on a buffet:
Cheese
Ham or possibly ham & cheese
Egg mayonnaise
The above possibly with token rocket or something.
Salmon & Cream Cheese.
Possibly coronation chicken
Possibly prawn cocktail

What I LOVE in a buffet:
Something different!

No one wants tuna, onion or even egg mayonnaise as it smells and egg can cause some people to fart

I often have to eat from sandwich platters at work events and my main bugbear is mayo. I can't stand the nasty slimy stuff, and it seems to be everywhere.

The second bugbear is lack of labelling. You cant exactly go and peel back each sandwich to examine what's inside in enough detail to establish whether it's butter, mayo or neither.

So, I'd suggest sandwiches that are clearly labelled, and preferably a few that are mayo free! The fillings you mentioned sound like a decent selection.

I’m going to go against the grain and say I never cater for fussiness if it’s a large group, I wouldn’t even think to ask for peoples preferences tbh. I would cater for dietary requirements but I wouldn’t cater for adults who are simply fussy. Surely if you’re providing a buffet they will find something to eat? How many are you catering for?
