Looking for inspiration as we seem to have got ourselves into a bit of a rut with dinner ideas, particularly those that might want to put a bit more effort into

Aside from staple meals (ie spag bol, fajitas, sausage and mash etc) what safe your special and and favourite meals to eat and cook in the house?

Favourites here include: chilli con carne and salmon fillets with mustard and chilli flakes, rice and veg.

I'm also partial to a fluffy jacket potato

Parsnip risotto (sounds odd but it's amazing!)

Salt & chilli chicken thighs.

Homemade carbonara.

Burrito bowls (chilli, nachos, spicy rice, guacamole, sour cream & salsa.

I love a simple & bacon salad.

Marry me chicken, made with piri piri seasoning and soft cheese.

Special egg fried rice with steak marinated in soy, hoisin and Chinese five spice.

Variety of curries

Cajun mince with dirty rice

Cottage pie

These are all super quick meals and take 30 mins or less (baked potato done in microwave and finished in airfryer).

Burrito bake - Make up chilli but top with hash brown bites, cheese and jalepenos and then bake in the over. Served with sour cream ,salsa et al. Super easy but everyone loves it.

Quick meal: filled pasta (eg tortellini) with a fresh tomato sauce and salad or garlic bread.
Comfort food: macaroni cheese with leeks (sauté the leeks in the butter, season well, sprinkle in flour, then gradually add the milk to make a white sauce. When thickened, add most of your cheese, stir in cooked macaroni, top with the remaining cheese, and finish under the grill).
Frittata or fried rice is a good way of using up odds and ends of veg.
Risotto is another good one, lots of variations on that.
Pan fried salmon fillets, mini garlic potatoes, and stem broccoli or green beans or asparagus.

Our weeks menu is
M - Nasi goreng
T - Mushroom Laksa with Thai crackers
W - Maple pork ciabatta’s with wedges
T - Leek and mushroom baked risotto
F - Thai red curry and jasmine rice
S - Meatball Pasta with garlic bread,
S - Roast Beef and Yorkshires

There that at least one of the two less fussy kids will moan about (Thai curry, nasi goreng, and mushroom laksa) they’ll have chicken fried rice, fish fingers and noodles and pizza)

Then I have a fussy one that won’t eat most meat or any sauce. She mostly eats plain pasta, nuts, fish and veg on rotation

Lasagna, because it takes a lot of effort and has a billion calories it doesn't get made very often.

Roast chicken dinner.

Topokki which is Korean rice cakes in a spicy gochujang sauce, it's fairly low effort and I eat it about once a fortnight.

An old recipe from Hello Fresh which was a pork recipe but we use chicken.

Fry off chicken and boil rice. Make sticky sauce of soy, garlic, ginger, honey, kejap manis. Add to chicken and bubble to reduce and make sticky. Get your rice and add some grated carrot, spring onion, loads of coriander and some chopped up peanuts (sounds mad but really works), add sticky chicken on top.

I like a home made curry. I do cheat with a curry paste (lots of it). It always makes the chicken in particular taste really nice.

I rarely repeat any meal more than perhaps once every three months or more.

Tonight is bang bang chicken salad/slaw with cold rice noodles and chicken.

I will say though that a staple in this house would be pie. Home made pie. steak and Ale, chicken, leek and ham, cheese and onion, minced beef, egg and bacon.

If you’re stuck for something that everyone loves, make a pie.
