Looking for inspiration as we seem to have got ourselves into a bit of a rut with dinner ideas, particularly those that might want to put a bit more effort into

Aside from staple meals (ie spag bol, fajitas, sausage and mash etc) what safe your special and and favourite meals to eat and cook in the house?

I'm a big fan of a chicken thigh traybake with any leftover veg in the fridge - tonight it's tomatoes, red pepper, spinach & potatoes mix with some olive oil, dried oregano and chilli flakes and then sprinkled with some feta that's been laying about.

Also, oven baked risottos are a bit of a mid-week staple here (there's a good recipe on BBC Good Food and I use those same ratios with whatever I fancy adding).

If I have a bit more time for kitchen pottering then:

Chorizo and chickpea casserole is a favourite in our house, we also love Delias chicken basque, Thai prawn curry, spaghetti carbonara. I also love a cooked breakfast for dinner.

The Hairy Biker's Spicy Pork & Rice from their diet book. When I fancy cooking something that will keep me in the kitchen a while, but not too difficult I always go for this one. It serves 4 but never survives the first night because we scoff it all!

An old recipe from Hello Fresh which was a pork recipe but we use chicken.

Fry off chicken and boil rice. Make sticky sauce of soy, garlic, ginger, honey, kejap manis. Add to chicken and bubble to reduce and make sticky. Get your rice and add some grated carrot, spring onion, loads of coriander and some chopped up peanuts (sounds mad but really works), add sticky chicken on top.

We make this too! But with beef strips. Shake the meat in cornflower before frying for extra crispy stickiness.

We like a kitchari, or a chorba- both basic veg stews really but interesting flavours and very nutritious. Top with kefir/crispy onions/coriander.

My favourite meal to eat is Chinese takeaway!

Cooking wise, I like easy stuff with not much to tidy away. Lasagna is quite easy.

frozendaisy · 18/04/2024 20:03

Egg Delhi style curry
Onion feta spinach filo pie
Greek salad
Anything mexican
Carribbean patties
Louisiana Cajun sausage and rice
Thai green curry
Quiche

But some evenings it's a tinned tomato soup and garlic bread type of evening

If I am alone peanut butter on toast

We also like a fruit salad in fridge

Homemade potato salad/coleslaw with burgers piled with salad and sauces, could call them dirty burgers

Teriyaki salmon with rice
Beef Stroganoff made with Quorn beef strips

pelotonaddiction · 18/04/2024 21:36

@Monkeybutt1 I don't like kidney beans so swapped them for haricot so it was more like baked beans

therealcookiemonster · 18/04/2024 22:24

6 beef shortribs. chuck them in a casserole dish with light and dark soya sauce, juice and zest of one orange, brown sugar, whole spring onions, ginger and garlic slices, chinese five spice powder. then cook until meat falling off bone. I shred the meat, mix with hoisin sauce and stuff then into bao buns (m&s does premade ones but not too hard to make at home) with strips of cucumber and spring onion.

really great for dinner parties too

IDontLikePinaColadas · 22/04/2024 18:29

@Crabble so good a reminder it's on the hob for dinner tonight!

Burrito bake - Make up chilli but top with hash brown bites, cheese and jalepenos and then bake in the over. Served with sour cream ,salsa et al. Super easy but everyone loves it.

This is epic! Just finished eating it, definitely making again.

deeahgwitch · 27/03/2025 18:25

Penne pasta with peas and prawns with Hellmans or a Caesar dressing added.

Redkatagain · 29/03/2025 15:22

Sun dried tomato chicken and courgettes. All in one tin in the oven with dried herbs and garlic. Serve with garlic bread. In the autumn it gets rid of tonnes of courgettes which always seem to grow in a glut all at once.
it’s also yummy
