There will be plenty of booze and it won't be fancy. I'll have about an hour to cook and bugger all time before to prepare in advance. Oh and you're family so I don't have to 'impress', but I want it to be lovely too!

Chicken and sauce, with nice veg and potatoes or bread. Like, mushroom or white wine sauce. Feel it's relatively cheap and easy to do, but feels fancy like a "proper" dinner.

A couple of bog standard pizzas with extra toppings (for example, really nice cherry tomoatoes, extra mature cheddar, some sliced green chilli, chorizo.....)

Who on earth can make lasagne in an hour with no prep time? It takes me most of an afternoon if it's made from scratch!

Tex Mex is the way to go. I will bring a nice bottle or two of Rioja to wash it down 🙂

A few curries, rice, selection of Indian breads, samosas/pakoras/shish, poppadoms & chutneys/raita.

If the hour is really all you have, steak, chips, peas and a couple of choice of sauces.

I’m a big fan of minimal wash up and while I love having the time to make a luxurious lasagne, it’s a bugger to have so much prep involved.

If I had an hour, I’d brush lamb chops with balsamic and rosemary, and have them ready to put under the grill with sliced courgettes. Bung baby potatoes in a roasting tray with oil and sea salt. Bag of rocket. Maybe green beans, so one pot to wash up.

Before that, tomato and mozzarella salad, sliced on a platter and lightly dressed.

After, cheeseboard and crackers, and some dark chocolate broken up for anyone needing a sweet fix.

Coffee cups ready on a tray if wanted.

Prep time 20 minutes, baby potatoes go in the oven when guests arrive.

A nice Chianti or Rioja.

So many nice suggestions (except the fajitas or chilli). However I am forced to eat a very bland, low fat, hardly any veggies, no salad diet at the moment so I would have to ask for something like a fish pie with a low fat sauce, or plain chicken and rice. Very boring! My breakfast today was white rice with about a dessertspoon of tuna, and a cup of peppermint tea.

In that time frame I'd probably make risotto. Or fajitas. Or I'd make something at the weekend and freeze it. Or this from Nigella-I promise it's amazing! www.nigella.com/recipes/fear-free-fish-stew

Baked buttery sweet potatoes, grilled halloumi, and lots of fresh salad with balsamic dressing followed by vanilla ice-cream with amaretto or baileys on top.
