Depends a bit on your definition of healthy, but mashed potato and baked beans would meet all your other criteria with bells on!

Lentil Dahl and rice or naan with some wilted spinach or Jacket Potato Beans and Cheese also can’t go wrong with whole meal pasta with a garlicky tomato sauce and cheese

Last week I roasted some veg with a chopped skin on butternut squash and mixed them with a packet of Moroccan flavoured couscous. Added some green beans. It was lovely and lasted for two dinners.

Do you have hummus, olives, tomatoes, cucumbers, some salad leaves, stuffed vibe leaves, quiche, etc.? We often make dinners of this sort. Easy, healthy, not too expensive.

Waffles with Tesco three bean mix on top cooked in a tomato sauce and fajita powder, slice of cheese melted on top. Yum.

Peperonata is great for bringing deli-type things together.

Sliced peppers (whatever colour(s) you like), garlic, onions if you want, can of tomatoes, some chilli flakes, salt and pepper. Fry onions, add garlic and fry more, add peppers, fry til softening, add tomatoes and chilli flakes, let simmer until it's nice and thick.

Cook some wedges, eat with refried beans, lots of cheese, guacamole, jalapeños, mix paprika salt lime and yogurt.

Beans on toast sprinkled with mature cheddar

Make a mixed bean chilli.
Chop an onion and pepper and throw in a ton of mixed beans in tomato sauce. Add chilli seasoning.
Mix in half a pack of that micro rice and some grated cheese. Mix together until hot and melty. Wrap up in a big wrap and it's a burrito! Stick in oven (or air fryer) for 5-10 mins until wrap is a bit crispy. Yum!
Dip in some sour cream/mayo if you have it.
