Refried bean quesadillas. Refried beans spread on a wrap with grated cheese, cooked mushrooms and peppers. Fill half the wrap and then folder over to cook. I actually want this now I’ve thought of it!

Beans and cheese on toast with a fried egg on top

Chips and veggie burger (that's my tea tonight)

Baby leaf salad, with sautéed peppers, red onions and cherry tomatoes, grilled halloumi on top, finished with balsamic glaze.

Last night I made a pasta bake made from onion, pepper, sweetcorn, garlic, herbs and tinned tomatoes. Topped it off with breadcrumbs and cheese and baked until topping crispy. If you don't want the cheese topping, add some red lentils to tomato sauce when cooking.

stew : onion, lentils/chickpeas, tin of chopped tomatoes, maybe some celery, garlic, curry powder, vegetable stock, coriander.

I made this yesterday, so am waiting for leftovers to heat right now ❤️

For lunch I had roasted mixed veg, mixed with a packet of cooked lentils. I crumbled some feta on top and drizzled with Harrisa/yoghurt. Very nice. Good leftovers to lunch tomorrow too.

Cheese ploughmans - cheese, pickled onions, pickled cabbage, pickle, apple, bread, butter

Homemade veg soups are nice - leek and potato, veg, or French onion with bread and butter

Veg curry and rice

If just want a light meal toasted sandwich with brie with grapes on the side.

I’m going to save this for later and work my way through these. I am having warmed wraps with hummus, pesto and a load of crispy vegetables.

A fave of mine is roast peppers, courgette and onions with garlic and cajun seasoning then boil some sweet potatoes and mash with a veg stock pot, top the veg with the mash and a little feta. Absolutely yum.

I'm having wholemeal pasta with a tomato, black olive and thyme sauce.

Takes about 20 mins. Store cupboard ingredients except the thyme.

Saw someone on Instagram make a quiche with a wrap squished in the bottom of a tin for a healthier base. I will try it one day. They used cottage cheese and a sprinkle of Parmesan to make it healthier but without the pastry it's already healthier!

We had leek & cauliflower cheese, a tomato salad, and focaccia! Perfect veggie comfort food on a rainy night.

Gnocchi bake
put a pack of gnocchi in a dish. Mix together a tin of chopped tomatoes, bit of boiling water, crumbled veg stock cube, a chopped courgette (or chopped spinach/broccoli/ any veg you fancy), any fresh/dried chopped herbs you fancy, pour mixture over the gnocchi grate a bit of veggie parmesan (0r other veggie cheese)over the top. scatter over a few black olives . bake for approx half an hour at about 180 fan.

Serve with a green salad.
Warning it comes out of the oven very hot so allow a serving to cool on a plate for a little while if feeding littlies.
