What's for dinner?

I am unreasonably excited about our dinner tonight. (It's the little things...)

I have to add though.... I have a child (14) who is VERY fussy with food, and he is gradually expanding his palate. This meal has been tried before and received a big thumbs up so I am hopeful.

Chicken legs and I mix butter, sweet paprika, garlic salt, cinnamon and smear it all over the thighs. Bake in oven. Plus tempura broccoli and honey sesame carrots. Tbf said fussy child won't eat the carrots unless they are raw but he might manage some of the broccoli.

I am about to meal plan for next week so would love ideas!

DH is on calls until at least 10pm tonight, with a one hour window in there for tea, so I'm doing my Mum's recipe for Chili-con-carne, on rice with peas and carrots.

Salmon roasted for 15 mins with butter, capers, lemon, red onion, sesame seeds and dill (kind of the flavours of a smoked salmon bagel)
Boiled new potatoes
Green salad with pine nuts and shaved parmesan

I have to cook the elements separately as different DC will eat different things, so it's a deconstructed version.

Well Tesco delivered my shopping today and the following go out of date tomorrow -

Two cod loins
Pack of king prawns
Pack of tempura prawns
Falafel
Lettuce
Strawberries

So something fishy with falafel and fruit for desert by the looks of it 😁

This is why I will never shop online with Tesco. They've been doing it for years! I've never had an issue with Ocado or Waitrose.

We had roast pork last night so it's cold roast pork with mashed potato and Branston pickle. To those that query where the veggies are... I had loads of home made coleslaw and lettuce at lunchtime and an apple this afternoon as a snack - and it's always a nightmare to get DH to eat veg.

To be fair, I’ve used them for years and never had a problem.

They’ve refunded all items thankfully!

I’ve just started making Pak choi for the kids as I’m a big fan. Put a bit of garlic olive oil and a some chilli flakes (a tiny bit for my Little’s), and pop in the air fryer until done. Great side dish.

Tonight though: left over shepherds pie and broccoli for the kids. My and DP will have chilli omelettes.

OP- I re-read you post and thought you'd written that you smear the chicken in batter- not butter!

Mexican lasagna tonight
I make the same mix I would normally have in fajitas (onions, peppers, black beans, chicken, tin tomato, fajita or taco mix);. I then layer a lasagna dish with wraps and the cooked mix above. You can add grated cheddar and/or mozarella, either to each layer or just the top to be a bit healthier. I bake till heated through and serve with guacomole and a simple salad.
I've just remembered, I normally add jalepenos and forgot! 😩

OP- Does your child eat crumbed chicken? I make this often with chicken thighs or legs.
In a bowl I mix about 1 cup of those orange crumbies (or almond meal for low carb or gluten free), about 1T paprika, 1 tsp each of onion powder, garlic powder, italian spice mix, celery salt and black pepper. I then roll the thighs in the mix and bake. No need for flour/egg etc.

I'm making Jamie's scruffy lasagne and taking half round to my mother. She's nearly 94 and since my father died six years ago, can't be bothered to cook. It's full of green vegetables and very easy.

Don't mention food! Due to stomach problems it'll be plain white basmati, but I'm cheating a little and will put a spoonful of chickpeas and broccoli cooked in stock on top.

Mealtimes are not a joy.

We're having sausage casserole in the slow cooker, which is great because all the cooking and most of the dishes are done waaaay before dinner time. I hate doing dishes after putting a toddler to bed!

I can’t be arsed tonight. Things are hard at home and I just want to curl up in the bottom of a bottle of wine.
Kids are having sausage rolls with frozen veg and gravy. I’ll have a sandwich or something later.

I’ve just had ryvita with crunchy peanut butter, slices of salami, cherry tomatoes and sliced cucumber. Totally random but I enjoyed it 😋
