What's for dinner?

I am unreasonably excited about our dinner tonight. (It's the little things...)

I have to add though.... I have a child (14) who is VERY fussy with food, and he is gradually expanding his palate. This meal has been tried before and received a big thumbs up so I am hopeful.

Chicken legs and I mix butter, sweet paprika, garlic salt, cinnamon and smear it all over the thighs. Bake in oven. Plus tempura broccoli and honey sesame carrots. Tbf said fussy child won't eat the carrots unless they are raw but he might manage some of the broccoli.

I am about to meal plan for next week so would love ideas!

I fancy having green shakshuka (and I have all the ingredients without going to the shop!) but not sure anyone else will. If not, it's leftover chicken fajitas.

Mexican lasagna tonight
I make the same mix I would normally have in fajitas (onions, peppers, black beans, chicken, tin tomato, fajita or taco mix);. I then layer a lasagna dish with wraps and the cooked mix above. You can add grated cheddar and/or mozarella, either to each layer or just the top to be a bit healthier. I bake till heated through and serve with guacomole and a simple salad.
I've just remembered, I normally add jalepenos and forgot! 😩

OP- Does your child eat crumbed chicken? I make this often with chicken thighs or legs.
In a bowl I mix about 1 cup of those orange crumbies (or almond meal for low carb or gluten free), about 1T paprika, 1 tsp each of onion powder, garlic powder, italian spice mix, celery salt and black pepper. I then roll the thighs in the mix and bake. No need for flour/egg etc.

The lasagne sounds goooood!

oooh the crumbed chicken sounds very good! yes, the Fussy Monster is probably mostly made up of crumbed chicken. But I never make my own- and adding the spices which he has started to really enjoy sounds like something to try!

I have become almost addicted to sweet paprika and garlic salt.

(I quite like the sound of chicken smeared in batter too. ) Grin
