I'm absolutely rubbish in the kitchen, end up with beige oven dinners or takeaway and my main problem is I have no ideas.

Would you mind sharing what your eating this week please?

This week I'm doing

Spinach and Chickpea curry

Tuna pasta bake (I throw in any and all veg to make this) and make my own sauce from scratch

Salmon fillets, new potatoes and veg

Sausage casserole over 2 nights with spring greens (again any and all veg gets flung in the casserole and bunged in the slow cooker. I also put in a can of mixed beans to bulk it out. I put 10 sausages chopped up between 4 of us to cover both nights)

Chickpea shwarma wraps and salad

Black bean fajitas and salad

We’re not very adventurous and often turn to threats like this for advice but this week we’re having:
sausage and mash
fajitas
Mexican chicken with rice
shepherds pie
breaded chicken with tomato sauce & Mozerella
jacket potato and bolognaise

I haven't actually meal planned this week but I'll give you my one from one of the weeks before Christmas (the last time I had the organisational level to actually meal plan).

Monday - homemade lasagna (with chips, garlic bread, salad)
Tuesday - chicken goujon wraps
Wednesday - pasta + meatballs (with garlic bread)
Thursday - chicken fajitas
Friday - hot dogs
Saturday - beef tacos
Sunday - roast dinner

or the week before...
Monday - jacket potatoes
Tuesday - pasta bake (literally a jar of pasta bake sauce from Tesco and done in oven, they love it!)
Wednesday - pancakes
Thursday - sausages + mash
Friday - tuna pasta
Saturday - beef stew
Sunday - carbonara

In no particular order

Butternut squash and sage pasta
Chicken madras, rice and spiced cauliflower
Vegetable pad Thai
Cod with herby Parmesan crumb, wedges, peas and sweetcorn
Stilton stuffed field mushrooms, tenderstem broccoli and green beans
Spiced cauliflower and roasted veg with cous cous.
Chilli and lime prawn tacos, Mexican slaw, corn on the cob, salsa and guacamole.

New to this but done one today before ordering a grocery delivery tomorrow.

In no particular order

I am planning on making two big vats of soup to eat some and freeze some.
1 x chicken and veg soup (DIY)
1 x roast parsnip soup (bbc good food recipe)
Roast dinner (tomorrow)
If any meat left will make an easy curry
Goulash (I haven’t made this for ages-eat half freeze half)
Big pan of chilli (eat half and freeze half)
Egg, beans and homemade chips (easy tea).
pizzas out the freezer (for an easy tea).

vegetable and edamame sweet chilli and garlic noodles

spicy carrot and lentil soup

bean and mushroom chilli with rice

chickpea and cumin cous cous with harissa roasted vegetables

roasted garlic, tomato and red pepper spaghetti

vegan shawarma (the only fake meat I like) flatbread with salad and chilli
sauce

Roast whole chicken with trimmings
Whole roasted side of salmon
Chicken burgers
Tomorrow night is weekly DH-Me date cooking night - Kids will eat leftover roast side of salmon with veg and pots and DH and I are cooking Chicken Green Curry from scratch with jasmine rice

This thread is making me hungry. Our meal plan is:

Sunday and Monday: ham and broccoli with creamy pasta
Tuesday: Oven pick n mix (frozen party food with salad and veggie sticks)
Wednesday: fajitas
Thursday: burgers and salad

Then need to shop on Friday and decide next week's meal plan!

So far this week we've had:

  • Gammon, mash, veg and parsley sauce
  • Homemade cheese and bacon quiche with potato salad
  • Chicken katsu curry with rice, lentils, naan bread and samosas
  • Beef stew with mash
  • Haddock florentine with mash and veg
  • Sausages, chips and beans.

Tomorrow is a roast dinner. I've been trying to use up the contents of the freezer so ended up with more potato dishes than usual.

Next week is more varied with pasta, cous cous, soup and roasted veg to bulk out the meals instead.

I just did a loose meal plan to shop:-

Beef Quesadillas
Spicy chicken Fajitas
Chicken Stir fry and rice noodles
Sausage and leek pasta
Meatball pasta carrot/courgette
Chicken garlic and herb rice

Lunches

  • wraps with fajita chicken
  • Tuna potato
  • Greek salad with olives and tuna
  • Chicken salad
  • Prawn wrap with thousand island

Aiming for 115g protein per day so really based around that.

Today: we had Savoury Breakfast Pancakes and dinner was Air-fried buffalo chicken burgers with sweet potato fries and onion rings.

Sun - Homemade sausage patties and Greek salad for breakfast and dinner is lamb ragu with mixed grains and vegetables.

Mon - Chipotle creamy beef, rice and peas/sweetcorn/cabbage

Tue - Zinger tuna fish cakes and salad

Wed - Pork meatballs, spring onion & ginger, rice & pak choi

Thu - chicken fajita pie & salad

Fri - beef, orange and ginger stir fry with noodles.

Lunches:

  • chilli chicken club sandwich
  • chicken gyros
  • Roasted root vegetable soup
  • carrot and ginger soup

We tend to have fave dishes on rotation every 2-3 weeks, and try a new recipe once or twice a week. Mostly they’re just one offs, but occasionally they get added to the faves list.

I follow the Batch Lady on Instagram - her recipes are family-friendly and simple. No faffing, and you either can cook in volume and freeze, or freeze bags you can lob in a slow cooker later.
