I'm absolutely rubbish in the kitchen, end up with beige oven dinners or takeaway and my main problem is I have no ideas.

Would you mind sharing what your eating this week please?

This week we’ll have:
roast chicken dinner
hot dogs
something with minced beef, probably shepherds pie or spaghetti bol (will do two days)
fajitas
sticky chicken and rice

In no particular order:
Somerset stew (veg stew done in slow cooker, BBC good food recipe) with broccoli
Salmon en croute (freezer Lidl) with carrots and broccoli.
Cheesy leeky puff pastry topped pie (all random bottom of fridge veg in cheese sauce)
Salmon fillets, mash and veg
Mussels in white wine (Vac pack Lidl) and oven chips - Saturday treat tea.
Cassoulet (veggie) and crusty bread
Frozen pizza for quick tea in between work and meetings

Today: roast rib of beef (early because ds and dil are here!)
Sun: lamb chops, cous cous with lemon, feta and mint, and a Greek salad.
Mon: chicken, marinaded in lemon and paprika, then quickly "fried" in the marinade (no fat added) with button mushrooms, stir in some single cream and serve with green beans and brown rice.
Tues: bean stew (pepper, red onion, courgette, aubergine, tinned tomatoes, bit of puree and two tins beans - does about 9/10 portions with brown rice and salad.
Weds: turkey bolognaise and salad.
Thurs: omelette and salad with brown bread.
Fri: salmon fillets, asparagus, new potatoes (might do some roasted cherry vine tomatoes)

Today - pork shoulder roast from two days ago with mashed potatoes and green beans..
Sunday - same again (it was a big joint).
Monday - empanadas made with pork shoulder and mashed potatoes, plus chopped onions, spiced with cumin, oregano, chipotle seasoning, with green salad on the side.
Tuesday - tacos made with the last of the pork shoulder re-roasted in chunks with cumin and orange, plus refried beans, Mexican rice, tomatoes, lettuce, cheese, sour cream.
Wednesday - Thai chicken curry with brown rice.
Thursday - leftover Thai chicken curry and rice.
Friday - leftover curry plus naan and dhal.
Saturday - bean chili with rice.

This week we had…

lunches
easy veg soup - frozen casserole veg, veg stock and red lentils, bay leaf. Can add curry powder and cumin when reheating if you’re getting bored.
spicy bean and spinach soup - so delicious and store cupboard friendly.

Cool a big batch and alternate days. Both really filling and low calorie cos January…

Dinners
Gammon, egg, homemade oven chips and beans.
Slowcooker chilli, rice, cheese.
Fake Nando’s - chicken breast in Nando’s sauce, Cajun sweet potato wedges, macho peas and salad
Pork mince lettuce cups
Chicken curry
Cajun beefy cheesy pasta
Thai chicken and pepper rice bake

Tomorrow - cottage pie and apple crumble with custard
Monday - chicken breasts in jerk seasoning done in the air fryer, with coleslaw (Greek yoghurt/mayo base)
Tuesday - frittata. I make it with cherry tomatoes, cheese and a bit of oregano so it has sort of pizza flavours to keep my cravings away. Green salad on side
Wednesday - veg burgers from the freezer (air fried) with corn on the cob and a simple guacamole that I make
Thursday - not sure yet, could well end up BLTs!
Friday - salmon fillets seasoned with Old Bay and done in the air fryer, with broccoli
Saturday - frozen breaded haddock and French fries (air fryer again) with peas and tartare sauce

I have chronic fatigue so I tend to keep things quick and easy but I do like to make from scratch when I can. The air fryer is an absolute godsend for me.

In no particular order (dependent on sell by dates and time and motivation) we will be having:
Roast chicken
Chicken curry - will make double to freeze a meal
Daal - will make double to freeze a meal
Thai fish curry
Steak
Shepherd's Pie
Eat out

It's just me and DS14 at home. He's a gym goer and is all about protein.
If it was just me I'd have soup, omelettes and cheese on toast. I'm kind of bored of having to feed children. Every Single Day.

I WFH and do quite a bit of prep in my little work station breaks (I have an app which locks my computer down every 55 mins for 5 mins, and it's amazing what you can do in that 5 mins - collect ingredients, chop some veg, get out pots and pans).

DS likes to cook so he always does the steak and if he wasn't back at school would do other meals, too.

Week 1
Sunday roast beef, Yorkshire pudding, roast potatoes and 3 vegetables

Monday leftover sliced beef warmed through in gravy with mashed potatoes and 2 vegetables.

Tuesday fish pie and 2 vegetables.

Wednesday chicken cubes and bacon lardons cooked then added to creme fresh, peas and a generous blob of Gorganzola poured over tagliatelle.

Thursday homemade Bolognese with wholemeal spaghetti.

Friday salmon cooked with lemon juice and new potatoes with peas.

Saturday homemade pizza with goats cheese, and Gorganzola.

Week 2
Sunday Roast chicken, roast potatoes and 3 vegetables.

Monday homemade Fishcakes and homemade chips cooked in air fryer.

Tuesday Toad in the hole with peas/baked beans.

Wednesday homemade lasagne with garlic bread and salad

Thursday pork steak casserole with apples, onions, carrots and swede. Served with boiled potatoes.

Friday breaded cod with mashed potatoes and mushy peas.

Saturday homemade pizza.

Also for lunches I have homemade winter vegetable soup, leek and potato soup, lentil and tomato soup, or a cheese omelette or a jacket potato with baked beans or a toasted cheese and ham sandwich or a sausage in a bread finger.

I never have a meal plan, I just eat what I fancy on the day.
This past week it was....
Monday. Gyros and rice
Tuesday. Sauerbraten & mash
Weds. Curry and rice
Thurs. Donnertella and rice.
Friday. Fillet steak & jacket potato
Saturday. Currywurst & chips
Sunday. Roast lamb dinner.

Today- Beef short rib, mash. Kale (noted of full roast dinners after Xmas but I like something with gravy on a Sunday!)
Then this week, not sure what order:
-half a roast squash, roast spiced chickpeas, pouch of lentils, kale, home made hummus
-Lamb koftes, home made flatbreads (both from the freezer) and hummus
-Chicken pad Thai
-Home made lasagne from the freezer and salad
-Halloumi and roasted veg traybake

  • Quesadillas with cheese, fried peppers and onions, a can of refried beans inside and avo/ guacamole on the side

I love these threads! We’re having:

Tonight: mushroom biryani
Monday: lemon salmon with parsnip mash
Tuesday: black dal and flatbreads (and a pineapple chutney I picked up)
Weds: kimchi fried rice
Thurs: chipotle sweetcorn, feta and sweet potato wedges
Fri: leftovers from whichever night yields some! We usually have takeaway but it’s January and everyone’s feeling the need for home-cooking.

Have you looked on instagram for inspiration? I follow a chap on there and now make the yummiest Mac and cheese, cider sausages and chicken pie. All really easy and the kids love it.

I also bought some reduced tuna steaks, going whip up something garlicky in pasta with them

@TheGriffle @EnglishGirlApproximately I have made that honey soy chicken, and it is delicious. Freezes well too.

This week, we'll be having

Slow cooker poached chicken and roast vegetables.

Slow cooker honey soy pork loin with noodles

Jacket potatoes (beans, cheese, egg or tuna mayo)

(Leftover) Chicken flatbreads with salad and sliced, roasted sweet potatoes.

Slow cooker beef chilli con carne with rice (in the rice cooker).

Home made tuna fishcakes with homemade potato wedges and (frozen) mixed vegetables.

I work three days a week, so love to pop everything into the slow cooker the night before, and just set it off in the morning.

It also means that I only use the big oven many one a week, and the small oven a couple of times.

Also, all of the meat (a whole chicken, 2 packs of pork loin steaks, a pack of steak mince) came free from Olio, and I froze them just before Christmas. Saves a bob or two!
