I'm sure that's fine unless it smells off. The brown is just where the air has got to it?

This darkening is due to oxidation, the chemical changes in myoglobin due to the oxygen content. This is a normal change during refrigerator storage. Beef that has turned brown during extended storage may be spoiled, have an off-odour, and be tacky to the touch and should not be used.

Yes - but not the whole of one side of the joint, and while it can look a bit brown, it's still reddish-brown & looks healthy.

That's vile looking - the poster is correct about the smell & touch of the meat, that should confirm it for you.

Whilst I’d agree that some change in colour is usually just because of oxidation, that looks rank!

If I could smell it I would know for sure but going by the picture there's too much browning and looks a bit slimey for me to say I'd eat it tbh.

I asked my DH, he's a chef. The color is fine, it's just oxidation.
Next test is smell. If it smells normal go for it.

So OP, now you have the opinion of two professional chefs.

I'm not doubting professional chefs - but did they look at the picture? It's not just the colour (though I've never seen any joint oxidise like that) it's the texture.

It looks really awful.

Obviously we can only go off the picture.

Chef DS said it doesn't look the best, but that doesn't mean it's not safe. He says if it smells bad, you'll definitely know.

He also says he'd probably not serve it in the restaurant but would eat it himself Confused

Just to update you all, I don’t eat beef so I have no clue when it looks bad. My mum said it smelt bad so will definitely not be cooking! The sell by date was today, gutted!
