Cheese - what would you choose?

I'm making a cheese board for boxing day. So far I have boursin and a nice mature cheddar. What would you choose?

every cheeseboard needs a blue Stilton type cheese YUM!
also Wensleydale with apricots makes my heart sing.

In place of brie or camembert, go with a Baron Bigod.

Try and look for local cheeses rather than off the supermarket shelf, you often get more interesting ones from smaller dairies.

Ooo, I'm pleased to see someone recommend Baron Bigod! We've had a hunk arrive as part of a cheese hamper - I haven't tried it yet, but have high hopes from the description!

I like mild cheeses. Yes to Cornish yarg, maybe the garlic one. I usually love Cornish blue, but some batches can be too strong for me. I really like Sharpham rustic for something different - it is a semihard cheese and you can get a plain version or one with chives and garlic. Goats cheese - Tor is really good - from Glastonbury. You can’t go wrong with Godminster cheddar. I like most Bries to be honest - Somerset is great. If you want more flavour go for Camembert instead.

Chilli jam or quince jelly and some good biscuits- yum - what else do we need for Christmas?
