Cheese - what would you choose?

I'm making a cheese board for boxing day. So far I have boursin and a nice mature cheddar. What would you choose?

Castillo pineapple halo. It's lovely and mild and contrasts the stronger cheeses well. I love it, and it looks fancy 😄

We used to go to a colleagues who was kean on dinner parties. He had amazing cheese selections, he used to visit specialist shops for cheeses that were difficult to find.

Nowadays at home it's just some crackers and oat biscuits with cheddar, brie, blue cheese, edam and a goats cheese. Only constraint is no cheese with 'bits'. OH gets the tubes of primula for spreading.

There was a cheese lady on Saturday Kitchen at the weekend she was good. However, Helen, the wine expert, said white wine is good with cheese! Maybe it's worth a look on iplayer

I'd go for a Somerset brie, Welsh Goats cheese, Black Stocks Stilton, red Leicester as my son's favourite, Wensleydale.

You ned to get tallegio and pair that with fig jam or quince. God it's lovely. You also need to att lots of fruits. I love the contrast between heavy cheese and light fruit. Physalis, grapes, pears, crips green apple slices...

Honestly Tasty
Its absolutely delicious vegan cheese, several different types. Contains no cruelty.
nothing like supermarket non-dairy cheese.

No goat or blue here bur Gruyère and Sage Derby and that pineapple ring soft cheese as advised by pp. Grapes, apples, walnuts and pecans, real salted butter, nice crispy crackers.

Not IME it isn't - far too bland
You really need brie de meaux; if no proper cheesemonger nearby the M&S version's pretty good

I'd also add something strong and fairly salty like bleu d'Auvergne (almost the same as roquefort but you get far more for your money)

We have it with a little salad and baguette so it's less obviously just gorging on cheese lol

As PP said we also prefer white wine instead of red with cheese
For a real splurge Sauternes (dessert wine) is perfect with Roquefort and blue cheeses

We're not keen on very strong smelly cheeses so we go with Somerset brie, port salut, black bomber, boursin then something random.

Stilton, a good Camembert, goats cheese, double Gloucester perhaps or a sage derby. Lidl has an excellent selection currently, we might have bought a decent percentage of the stock here!
