i make loads of soups, especially in this cold season, healthy warm and satisfying. Im veggie so quite simple and cheap to make.
Todays soup is, carrot leek apple and potato.
My currant favourite is tomato orange and ginger.
No recipes, i dont do any frying or sauteing i just chuck what ever ive left in the fridge in a pan with veggie stock , simmer then blend.

here is the recipe for my all time favourite soup:

peel and chop a butternut squash and a couple of carrots, toss in generous slug of olive oil and salt, roast at 180c for about 30 minutes or until golden.

add this roast veg to a saucepan with a can of coconut milk, a cup of water, and a veggie stock pot or cube. Bring to the boil and simmer for 15 mins.

add a tablespoon (or to taste) of curry powder (I like the korma curry powder from Tesco) and blend. Add water to thin if necessary. Season to taste.

serve with a dash of cream and a sprinkling of fresh coriander.

it’s the best soup ever!

Love soup, find a decent stock, decent spicing/herbs and seasoning, then I always add a thickener or either a couple of potatoes (for broccoli soup) or lentils (when making root vegetable soup) and onion/garlic fried to start.

we have oddbox so soup occurs based on that although DD loves broccoli soup

2 onions
2 sweet potatoes
250 gms of chestnut mushrooms
2 bay leaves
Chopped Thyme
vegetable stock cube
2 garlic cloves crushed .
1.2 litres of water
Fry onions and garlic for a couple of minutes in a saucepan.
Add chestnut mushrooms, sweet potato, bay leaves etc.
Add vegetable stock cube and water.
Simmer for 20 minutes and then blend for a smooth soup.

My kids when young used to eat any home made soup, as long as it was "orange or yellow "! Meaning, not green 😄

And my top tip is to add a can of any pulses eg lentils or butter beans. As extra protein and for thickening.

@Newgirls which book is this? Could you post a link or photo of the cover please? One of my DC is veggie & the other loves soup, so this sounds perfect for us.

I actually hate most soup but I like this one..

Saute onions in oil
Add sweet potato chunks
Soften a bit in the oil
You can add chilli/garlic/coriander/cumin if you want
Add chicken/veg stock
Simmer until sweet potato is soft then blitz/puree
Add a can of coconut milk

My favourite soups I’ve made recently were this roasted feta and butternut soup and roasted pumpkin & parsnip - that was just blended up leftovers from the roast we did the day before but it was so tasty I’m making it again today!
These were also good from last year :
Finnish salmon soup
Carrot ginger miso soup
Sweet potato & tomato
Love soup, I make my own stock too, always have a bag of veggie scraps and chicken bones in the freezer ready to boil up 😋

I second the baked feta and butternut squash, made some on the weekend for the first time and everyone loved it, you can out in as much garlic as you want. Loads of videos on social media!
