Roast gammon joint - suggestions for side dishes please

I normally go for fried eggs and chips but I fancy being a little more adventurous this time. I have some nice butcher's sausages (made with dried fruit as well as pork) and I'll make some roast potatoes too. I'm thinking of something savoury and cheesy such as cauliflower or broccoli cheese and carrots.

I second braised red cabbage with a chopped apple and red wine vinegar, dauphinois or Lyonnaise potatoes. I would also served al dente carrots with black pepper. Enjoy your meal OP

You could do a mixed macaroni and cauliflower cheese bake.

Or colcannon and white onion sauce with gammon is a classic combination.

For something different, try gammon with cheese topped ratatouille.

I like potato day dauphinois. The cheesy creamy garlicky sauce goes well with gammon.

Every day is potato day in my book...

Pease pudding! You're supposed to soak the split peas in the water you boiled the gammon so they taste lovely and salty and hammy, the perfect pairing. But I'd also not say no to red cabbage and Cauli cheese.

I think cauliflower cheese, which is quite salty, with gammon would make quite a salty meal. I would want something to counter-balance that such as a carrot and swede mash.

Actually I usually make onion sauce, mashed potatoes and cabbage. My family love onion sauce and I have to make pints and pints of the stuff. Not onion gravy, onions in white sauce.

Make a lovely béchamel sauce with plenty of dill in it.

Serve with glazed carrots, roast potatoes, and at least one green veg.

I won't be boiling the gammon before roasting. I know it's an option but I've never bothered, so no pease pudding here! Also, I find that roast gammon isn't as salty as a grilled gammon steak so I'm not too worried about added saltiness from cauliflower cheese. In any event, I shall have wine and water on hand. I have a bottle of 2022 Beaujolais so that might be worth a crack.

I'm reminded of another cheesy side dish I once bought from M&S, parmesan roast/parmentier potatoes. I haven't seen them for years so I guess they are discontinued but they were delicious and very rich. Anyways, plenty of ideas now.

I make a warm pineapple salsa. Finely diced pineapple, red pepper, red onion, caramelised in a pan with chilli and Nigella seeds. Serve with sweet potato mash and tenderstem broccoli.

Cauliflower cheese and roast skin on new potatoes.

I can manage the roast potatoes but I'm tempted to cheat with the cheesy stuff . Mash Direct broccoli with cheese sauce is what I'm thinking of.

Has anyone here ever made Cumberland sauce ? Is it any good ?

That lidl red cabbage and cranberries they do for Christmas is on sale now (freezer section). Macaroni cheese or cauli cheese and minted peas I would also do.

Oh and butterbean mash, (Ainsley Harriot recipe is good).

Of course it's a roast, so you were going to do Yorkshire pud.

Cheesy spuds is what you need.
Boil then thickly slice a few potatoes.
Thinly slice some leeks and boil.
Line bottom of oven proof dish with one layer of spuds, a thin layer of leeks, then a layer of grated cheese with a sprinkling of black pepper.
Continue layering like this until 3/4 way up the dish.
Pour a small carton of cream over then finish off with a layer of grated cheese.
Place in oven until cheese has melted and browned. You can also do it in the air fryer.

Perfect with gammon, ham or bacon.
