Ratatouille might work.
If the diabetic is low carb it cuts out an awful lot that you could otherwise use.

To me a risotto isn't a risotto without parmesan! I wonder could you get that similar salty unami flavour from yeast flakes stirred through? I usually add a knob of butter too but maybe that would make it oily....

I think I'd do a buffet, tbh. It's too difficult to combine all those things. I was going to suggest making curries and side dishes but one of them doesn't like spicy food. Would they be OK with something like a Korma?

I often make risotto without cheese or butter, it's just as tasty the trick is to use a nice broth. I do put mushrooms though 😂

I believe they have Crohn’s so being very mindful of not adding anything that might impact them.

Truffle oil is your friend here
