What were the last three meals you or your partner cooked for the family?

I’ve come back from holiday and lost my mojo. Trying to get ahead and plan for the week and running out of inspiration. I like cooking from scratch - this week I’ve made slow cooker lamb ragu, beef and lentil curry. But I seem to be leaning towards red meat a lot and trying to break that habit so looking for inspiration!

Tonight we're making pork tonkatsu with curry and rice from scratch. I normally do all of the cooking as I am a better cook than my husband (though he is still good!) but right now I have all day morning sickness so he's been doing pretty much everything .

Last two meals before today were fish and chips and veggie pasta. Totally uninspiring there but we've been trying to find meals that are easy and quick for him to cook after work.

Batch coking earlier this week I made:

Macaroni cheese
Chilli con carne
Shakshuka (just the base, ready to reheat and add the eggs)

Also made a Moroccan lentil soup, but that's for my lunch.

Not very inspiring I'm afraid but they were all very nice! I'm trying to cook once, eat twice as much as possible and these a pretty good for that. I made enough tomato sauce for another 2 pizza nights, there was left over pizza for dh to take to work for lunch and leftover coleslaw for my lunch. I did a big batch of Thai paste and the rest has gone into the freezer, same with the bolognese sauce.

My cholesterol is a bit high so I've been substituting beef mince with turkey mince. So far it's worked with lasagne, chilli con carne, burgers and meatballs (not all in one week though). Last 3 meals I cooked were; tuna pasta bake, chilli fajitas (with the turkey mince) & Chinesey chicken stir fry

I don't usually do beef two days in a row; wasn't paying attention.

Depending on what arrives in our vege box today, the rest of the week will include roast chicken, risotto or jollof, and maybe homemade pizzas on Sunday. There'll likely be a freezer meal on Friday or Saturday.

Pork tenderloin with stir fry veg and noodles. And I made a basic Satay sauce - coconut milk, lime, curry powder, soy, peanut butter, coriander.

Salmon cooked in baking paper in the oven, with roasted squash and beetroot.

Beef brisket in slow cooker. 1st night we had it with veg and made some gravy, 2nd night had it with rice and stir fry veg.

Home made Puttanesca Spaghetti (tomato glut)
A Spanish-influenced butter bean, butternut squash and tomato stew (lots of tomatoes….)
Tomato and lentil soup with sourdough toast.

Really enjoying puttanesca sauce. We usually make Spaghetti a la Norma. Not veggie but eat a lot of veggie meals for cost and health (Puttanesca is not veggie, it has anchovy in it).
