Savoury breakfast ideas?

If I want something savoury instead of my usual porridge, does it have to be eggs? I have fish fingers with sweet potato fries and baked beans this morning, but I'd prefer something to prepare and cook. Grateful for any ideas. I'm omnivorous but probably wouldn't want bacon or other meat more than once or twice a month.Edited because of annoying autocorrect of fries to fried.

Toasted bread, soft cheese and sundried tomatoes.

Cheese on toast.

Omelette with chopped spinach leaves.

There was a time in my life when I was having savoury breakfasts every day. I would have whatever one might have in the evening - fried rice, cooked salmon and veg, etc. Don't be limited by thinking 'breakfast'!

Years ago, I was listening to Radio 4 in the car and they had a programme called Down Your Way. It was in Belgium and the farmer and his wife had toasted home-made bread, soft butter, warmed up breakfast radishes with some fresh herbs on top. I made it once with some nut oil drizzled on top and its delicious. Sainsbury sells packs of mixed radishes which would work a treat. Or grow your own.

Another breakfast I like is a croissant with a thin slice of soft cheese like Edam filled with sliced tomatoes.

Or thin sliced bread toasted, pastrami and something soft like tomatoes or mayonnaise.

Beetroot is also good in the morning.

Shaksuka, you can leave off the eggs. Burritos
Stuff on toast - avocado/beans/mushrooms.
Avocado with olives and tomatoes.
Cheese toastie, or a croque monsier.

A bowl of soup or dahl would work if you like them.

I eat noodle or rice based dishes most mornings. Or if you want something lighter you could do salads or soups.

I also love those Richmond meat free sausages with baked beans on the side.

crumpet thins (cheese spread, butter)
protein bagels (I like it with smashed avocado but salmon, cheese spread, cottage cheese)

I cooked up rice (fried it lightly) with edamame beans and spring onions for breakfast. You can add a scrambled type egg to it too. I really liked that for a while

You can make a fun egg wrap by mixing an egg with a little bit of milk. Put it in a hot frying pan, let it solidify a bit, put a small wrap on top while it’s still a bit wet. Add whatever you want to the top of the wrap. Something in creamy or cheesy works well. Fold your wrap, let it finish cooking both sides and that is delish and quick.

Beans work well too - like baked beans. Or do a kind of hot bean salad type thing. Savoury breakfasts are so overlooked

Kedgeree might also work. Sardines in tomato sauce on toast? I like Welsh rarebit and you can make up a big batch and keep it in the fridge for up to a week.

I quite like crumpets with Boursin and sliced chicken.

I don't like sweet things so I often eat leftovers from dinner.

But I love things like salami, butter and baguette sometimes. Plus sometimes an Israeli-inspired breakfast which is more a weekend thing, basically salad veg with olives and pita;

Toasted crusty bread with garlic, smashed tomatoes, olive oil, salt and pepper. Rub the toasts with a clove and smush the tomatoes into the bread. Sometimes I have some Serrano ham on top. This is my favourite breakfast.

Pate on toast.

Avocado on toast.

Melon, ham, burata.

I sometimes have soba noodles with miso soup and silken tofu if I'm feeling fancy, but as a PP mentioned, tomatoes on toast is a favourite, as is smoked fish.

seeded bread with avocado, poached egg, salt and chilli flakes - also lovely!

Can get heck sausages (chicken) and cook them with mushrooms and tomatoes.

Fried rice, really common breakfast in SE Asia. Use rice leftover from the day before and add other leftovers, fresh veg or frozen stir fry veg, egg can be throw in with rice, fried and put on top or omitted all together.

Mushy peas or home made baked beans on toast.

Bubble and squeak, use leftovers with mushrooms or what you fancy.

Frittata, I use the concept of how much stuff ca you stick together with minimal eggs. Make a reasonable size one and you can spread it over a few days.

I also like Singapore noodles or noodle soup for breakfast but many think that is too weird.

lastly … this is an egg recipe - but I made these savoury breakfast egg muffins loosely based on: this recipe

basically you chop a combination of any of the following : mushrooms, onions, red peppers, courgettes, asparagus, broccoli, chilli and drizzle on olive oil and roast in oven until tender then whisk eggs and maybe a little milk or cream, and lots of Parmesan cheese together, then assemble together in oiled muffin tin and bake in oven with more Parmesan on top. You can also add raw spinach and/or cooked smoked bacon lardons at last minute. They are excellent.

I have these savoury bagels every day but you could substitute the egg.

Crack 6 eggs into an overproof dish and add torn up spinach. Bake in the oven until cooked and then cut into 6 squares.
Add each square to a protein bagel thin with a slice of cheese and then some sriracha if you like spice. I then wrap each one up in foil, freeze them and then just defrost them the night before and stick them in the air fryer for 10 mins in the morning.

It works out at 324 calories and 22g of protein if you track your macros.

I love 'hash' which is basically last night's roast, fried up like a bubble and squeak. Though we don't have roast dinners enough to make that a regular thing.

So I also like an 'omelette aux fines herbs' which is basically just an omelet with finely chopped green herbs (whatever you have in the fridge) and salt and pepper. Sometimes I add some sauteed courgette.

Oh I also like Hangzhou breakfast tofu which is basically:

Silken tofu buzzed in the microwave for 30 seconds
Drizzled with sesame oil and a bit of diluted soy sauce
Handful of fresh coriander
Handful of bombay mix
Bit of chili crisp or chili oil is optional

Look at German and Scandi breakfasts, Turkish breakfast, and Asian breakfasts.

If you're not keen on eggs in any form (including omelette, frittata, etc) how about

Kedgeree excluding the eggs
Sardines or mackerel on toast
Dhaal or a mild potato or vegetable curry
Cottage cheese with cucumber /tomatoes on seeded bread
Rice with tofu, seaweed and kimchi
Croissant with emmenthal and tomato
Spanakopita
Beans on toast
