What's your favourite healthy lunch?

I really need to get to grips with my terrible eating. I really struggle to be moderate- I'm either doing sone ridiculous low cal diet or eating all the pies.

It occurred to me earlier when thinking of what I could have that was "nice" I was focusing on sweet stuff, when in fact I do enjoy tasty healthy food.

So - what are you go to healthy lunches? Doesn't have to be a lettuce leaf and half a tomato, but preferably not 3 slices of cheese on toast either.

Although I've just realised I had 410 carls worth of feta. Oops. But total cals was only 488 so I think that's ok.

I've cut down on feta by adding some of these marinaded veg for flavour. Because they aren't in oil, they aren't loads of calories.

I tend to put in 1/4 pack of light feta if I'm having it. That's about 100 calories.

Air fry red peppers, tomatoes & red onions sprinkled with oregano. Add to a pile of rocket and put grated cheese on top. Sometimes I add olives.

Any combination of chicken, red onions, tomatoes, perhaps even some sweet potatoes as well... I'm picturing it now...

I've made up an excellent grain salad recently. Sainsburys do a salad base mix of wild rice, pearl barley and chick peas that you simmer for 15 min and it's ready. Add to this sun dried tomatoes, black olives, cucumber, sweet corn, feta, basil and pine nuts. Dress with a bit of olive oil. It's brilliant.

Salad with cheddar/feta/tuna/chicken, some cherry tomatoes, cucumber, pumpkin seeds, olives and mayo or olive oil with balsamic vinegar. I eat with this some crackers, sourdough bread or just normal toast bread. Depends what I have at home. This is what I eat for lunch Mon-Fri.

Homemade high fiber muffin warmed up, with mixed avocado, feta and egg, or carrots and humous. So nice!

@SausageinaBun can you recommend a really syrupy balsamic ? I always end up with watery ones.

I do love a nice salad and in this weather especially!

Belazu aged balsamic vinegar (needs to be the aged ones, not their regular one) is really thick and gorgeous op.

At this time of year I always have salad. Really basic but I love it. Just all the salad veg I have chopped up small(this is vital) with some kind of protein chicken/feta/eggs/whatever with a balsamic dressing.

I like a salad or an omelette mostly, but also home made soup. Any time I make a big pot of soup I wonder why I don’t make them more often. The secret is roasting the veg before making them into soup, add lots of flavour.

A mixture of at least 6 salad items: lettuce, cherry tomatos, radishes, sugar snaps or raw peas, onions, spring onions or pickled onions, parsley, chicory, cress/watercress, raw carrot, etc. with oatcakes spread with the smelliest blue cheese I can find.

Chopped beetroot, feta, baby tomatoes, cucumber, black olives and lots of black pepper with a dash of balsamic vinegar with oat cakes is lovely 😊
