What's your favourite healthy lunch?

I really need to get to grips with my terrible eating. I really struggle to be moderate- I'm either doing sone ridiculous low cal diet or eating all the pies.

It occurred to me earlier when thinking of what I could have that was "nice" I was focusing on sweet stuff, when in fact I do enjoy tasty healthy food.

So - what are you go to healthy lunches? Doesn't have to be a lettuce leaf and half a tomato, but preferably not 3 slices of cheese on toast either.

Ready cooked fish - like mackerel, tuna, salmon, with a salad and new potatoes

Soup is my go-to in autumn and winter.

Eggs, mushrooms or tinned tomatoes on toast.

When the weather is warmer I make a big batch of cous cous mixed with harissa, chickpeas, olives, preserved lemon and chopped parsley and then eat that for lunches all week.

When pressed for time I like porridge or protein yoghurt with berries, flaked almonds and a drizzle of honey.

Love a nice salad at this time of year. Tabbouleh, Greek salad, roast veg and couscous, new potato/egg/leaves.

I usually have ...

1/2 packet of Jamie Oliver sun dried tomato and olive quinoa with some avocado, salad and pine nuts

Or a wholemeal pitta with goats cheese and roasted veg

Or a couple of slices of seeded sourdough with hummus and tomato and rocket

Followed with a bowl of cherries or a nectarine and a few pecans or Brazil nuts

The M & S Collection balsamic is decent btw. It's £10 a bottle but you don't need much.

Love a Lentil and feta salad.
Green lentils, finely chopped red onion, Celery and feta with balsamic I sometimes add roasted sweet potato's and /or peppers. I make enough for 2 days.

Some great ideas here, thank you. I love a pretty standard grilled chicken salad, but I think I've come to associate it with diet food so need to branch out a bit.

I also tend to avoid bread, pasta , potato's etc but I think I need to stop that.

I do love a nice salad and in this weather especially!

I’ve been making myself a sort of baked omelette / Spanish tortilla thing. Couple of small chopped potatoes or pieces of butternut squash, absolutely stacks of veg of any kind we have in the fridge, roasted until soft then tip in a couple of eggs & extra greens for a couple mins grilling at the end. With a spoon of miso paste or mustard for extra zing. Seriously delicious and filling. I have it with kimchi sometimes.

Tuna (tinned, in spring water) and white bean (canellini beans usually) salad, with red onion, little bit of reduced fat mayo, on a bed of whatever salad veg I feel like .

Cook and cool some brown rice. Mix with chopped veg-spring onions, peppers, carrots, celery etc. dress with olive oil, harissa paste and line juice. Add herbs- mint, coriander salt and black pepper. Keep in a Tupperware in fridge and serve with peppered mackerel, some chicken, salmon or tinned sardines together with rocket or other leaves and tomatoes.

All kinds of salads, generally following this pattern:
Something leafy (lettuce, spinach, basil, massaged kale)
Something crunchy (toasted seeds, carrot, crunchy lettuce, endives)
Something protieny (lentils, salmon, chicken, cheese, smoked fish)
A nice dressing (lemon, tahini, miso, vinaigrette)
Something else delicious (roasted veg, nuts, extra cheese, pickles, croutons)

A sandwich can also be healthy. The best quality bread I can afford (tesco do a really good white loaf with sourdough) with eggs or tuna and a side salad with tomatoes, cucumbers and olives.

It depends what I have for breakfast as well though. I have a really physical job so need 3 decent meals a day. In saying this, I never snack.

Salad with lettuce, tomato, cucumber, lots of parsley, red onion, feta, a drizzle of really syrupy balsamic and some black pepper. Sometimes I add some chopped sundries tomatoes or marinated garlic. I'm on a diet at the moment and eat this or a variation most days. It's good enough that I will probably continue to eat it when I'm finally off my diet and trying to eat just in moderation.

My mouth is actually watering as I read this. I’m making it tomorrow!

I am addicted to, an oat cake, spread with houmous, slice of avocado on top. Keep eating until I have finished the avocado. Such a fresh lunch in the heat too.

Go for a Balsamic glaze rather than vinegar 🤤

I make a cheese tortilla, one tortilla, 30g cheese, chopped sundried tomato, jalapeños and coriander. Put on one half of tortilla and dry fry. Serve with salad, 340 calories

Another favourite is a heap of stir fry veg fried (frozen is easy), quorn mince or cooked chicken, soy sauce, garlic and chilli and udon noodles mixed in. A filling low cal lunch

My current favourite is rye bread with cottage cheese on top with a big bowl of salad. I find rye bread to be much more satisfying that wheat bread and, I think because it's a more intense flavour, less easy to overeat!
