tonight for 4
chop 2 small onions and 1 large pepper, 3 chicken breasts and half a chorizo ring.
Boil kettle
Fry the chorizo in a large pan until it gives off it’s fat and then scoop out, fry the chicken until sealed in chorizo fat and scoop out. Chuck onion and pepper in and fry until softened.
Put chorizo and chicken back in pan and add rice and stir
sprinkle in some hot smoked paprika, garlic powder,, thyme and chilli flakes (optional) - squirt in a couple of tbsp of tomato purée
Break in a chicken stock cube and pour over water from kettle
cook until rice is done
we had it with natural yoghurt, siratcha, cheese and jalapeños sprinkled over according to taste
