What is/was for dinner tonight?

Food shopping tomorrow morning...give me some inspiration for our families meals this week 😊 2 adults & a 2 year old who eats everything and anything!

We’ve just clearers our freezer stash of batch cooking ready to start again so bonus points for anything I can cook double of and freeze 😊

Spicy lamb mince with cous cous. It’s a Gousto recipe we loved - brown the mince, add red onion, harissa, ras el hanout, couple of stock cubes, tin of chopped tomatoes, slosh out the tin with water and bake, uncovered, for an hour. I usually do lots of jackets at the same time, then the next day stir in cheese and onion, top with more cheese and reheat. Both parts freeze well.
Lunch was eggy bread, topped with yoghurt and fruit.

Tonight it was mushrooms, spinach, cream cheese, bacon, spring onions, herbs, splash or 3 of milk. We call it pasta non carbonara

Tonight was quick cook turkey steaks baked in the oven like escalopes in lemon breadcrumbs (heel of stale sourdough whizzed in blender plus grated lemon zest) with mixed green veg oddments (whatever was left over from the weekend bulked out with peas).

Tomorrow is fish pie bulked out with leeks and sweetcorn

Wednesday Spinach and feta tart

Thursday out for dinner - DC will get themsleves sausage beans and mash

Friday Mushroom Stroganoff

Saturday Venison casserole.

Tonight in our house it was homemade bread with a couple of nice cheeses and fruit!

Tomorrow I will probably have to cook..

He's fine... 4hrs in A& E, 2 foot xrays later - to be told 'it's just bruised!' Thank you.

Maccy Ds it was on the way home at 10pm... it still tasted like cardboard even though I was ravenous by that point! (DS enjoyed it though but he as weird 9yr old taste buds!)

So this week, starting yesterday.

Steak sandwiches for some and M&S veggie moussaka for others.

The roast chicken no one was in the mood for yesterday, lots and lots of sprouts, fine green beans, roasties and roast parsnips with homemade lemon and thyme stuffing and gravy made from the giblets.

Tomorrow DH and I will have soup and sourdough toasted. DS is training 7-9, so will have a steak sandwich post training.

Wednesday Barnsley chops rubbed with garlic for those that fancy them with new potatoes and fine green beans and garlic butter on the side.

Thursday Lasagne or shepherds pie, easy for DS after training.

Friday takeaway fish and chips for DH and I and a battered sausage and chips for DS.

Saturday we may eat out, actually we won’t just remembered rugby all weekend, so that will be fish finger sandwiches around. Grin

Sunday - Roast

Haven’t had Mediterranean fish stew for a while, so will ponder on that this week, for next week.

Nor have we had fish pie come to think of it, nor scallops with pea purée and black pudding…..hmm omega severely lacking in diet, must sort.

I also have the makings of a lamb stew in the freezer will do that soon.
