Food shopping tomorrow morning...give me some inspiration for our families meals this week 😊 2 adults & a 2 year old who eats everything and anything!

We’ve just clearers our freezer stash of batch cooking ready to start again so bonus points for anything I can cook double of and freeze 😊

Rest of the week is mainly the Planthood meal box that I ordered after seeing them on Dragons Den:

T - Gnocchi in porcini lentil sauce
W - Kimchi nourish bowl
T - Cauliflower and aubergine korma

Friday and Saturday we are out for dinner.

Tonight I had scrambled egg with grated cheese onto, and oven chips on the side.

Other meals planned this week:
-home made egg fried rice with some Christmas ham I have lurking in the freezer.
-beef stew with mashed tatties.
-slow cooker Brazilian chicken.
-beef fajitas
-pizza Friday!

Moroccan chicken tagine. I made a big batch, with rose harissa, saffron, sumac, olives, onions, preserved lemons and lentils, using a collection of thighs and drumsticks. It lasts me for several nights as I live alone, but you could divide it up for the freezer, OP.

Pork and beef bolognese with courgetti and grated cheese.
I made loads but I'm staying at my fiancé's and going home tomorrow so he gets to eat the rest!
One 500g pack made enough for 5 adult portions.

The rest of the week I've got pork loin steaks I'm going to try with various marinades and rump steaks with green leaves mainly
I'm on a very high fat/protein keto diet so don't tend to cook the kinds of things that can be batched cooked a lot.
But the bolognese is always a winner.
