My friend’s mum was lady-in-waiting to Princess Anne. It’s just helping out with correspondence, attending events and making sure things go smoothly (if there’s a problem then the lady-in-waiting can raise it which is easier for everyone than the royal doing it), holding flowers that are given to the royal, keeping them company etc.

The company bit is quite important. Often at a function the queen wouldn't know anyone there, so the LIW would be someone to chat to. The queen also had various signals she'd use in case e.g she needed to be rescued from someone talking too long and the LIWs would watch for those and step in.
