I was really fancying pad Thai. I didn't want to order. So I googled pasta and peanut recipes. I found a really easy one with ingredients that I have. It took about 15 minutes. Saved money was pretty healthy and quick.

It's vegetarian but you could easily add prawns or meat? I might add tofu next time?

Anyone got a good one to add?

I didn't have noodles hence pasta. I used tagliatelle.

A firm fave in our house with DC is bacon tomato pasta.

Boil pasta. Fry bacon and add fresh tomatoes (ideally to use up soft ones or tinned work in a push too)

Mix together with a tablespoon of mayo.

Done! 15 mins. You cna also add any other veggies to make it more healthy if needed but this is an ideal mid week staple here

This is a good store cupboard/fridge pasta, as halloumi has a good long use-by date. I use dried pasta.

Did you use all the correct ingredients?

I'd probably substitute soy sauce for tamari, olive or sunflower oil for sesame oil and sugar for maple syrup. I wonder if it would still taste good.

It also says gluten free pasta? Dh has bought about 20 packs of gluten free pasta, which no one likes. Does gluten free work well in this recipe? Would love an opportunity to use it up.

i always have halloumi in the fridge now. It goes on a salad with some croutons and walnuts. In stir fries. In a roll with a black bean burger and slices of tomato or fired onions. Or both.

The sesame oil probably adds quite a lot to the flavour. I suppose if you don't have any but did have some tahini or sesame seeds, you could try some of those in the sauce.

Plenty of Italian pasta dishes are just 'heating things through'. The OP didn't ask for gourmet recipes or any recipes in fact, just 'quick supper dishes'.

Prawn and chorizo spaghetti

put spaghetti on to boil
fry onions garlic and chorizo
add big big glug of white wine and some fresh tomatos
chuck a load of parsley in
add prawns
drain spaghetti
mix together and chuck Parmesan on top.

takes about 10 minutes and everyone loves it

Walnut pesto - walnuts, olive oil, garlic, parsley, salt, all whizzed up then grated Parmesan added. Goes very well with wholewheat tagliatelle; additions could be a lump of goat cheese and a couple of cherry tomatoes or some rocket.

I didn't use gluten free pasta. Only thing I substituted was soy sauce instead of tamari. I added a bit more peanut butter as it was crunchy instead of adding extra peanuts. Plus I put chopped coriander on at the end.

Pizza is pretty quick if you buy bases (or dough). But what’s even better is sweet potatoes ‘pizza’

I slice sweet potatoes thinly, drizzle them with oil and zap them in the halogen oven (but an airfryer or combi oven would work, and a hot fan oven would just take a bit longer). While they’re cooking, blitz a tin of tomatoes with a clove of garlic, a splash of olive oil, S&P and a few basil leaves. Pour over the sweet potatoes, add mozzarella (and meaty stuff if you like that) and shove it back in until the cheese it melted. It’s really good - better than pizza base and more veggies. It’s a knife-and-fork job, but none the worse for that and makes a change from pasta.

I reckon you can’t beat spaghetti carbonara for a quick sauce. But I did see a recipe for macaroni cheese yesterday where you cooked the pasta like rice (twice as much water as pasta by volume) until most of the water evaporates, then just add cream cheese and grated cheese and serve. No idea if it’s any good, but a lot faster than messing about stirring bechemel sauces, so I plan to have a go at that this week.

My favourite is tuna and pasta with salad.

For me the pasta must be good quality for it to be good. Boil pasta (I prefer spaghetti) and drain. Put in large salad bowl and mix with can of tuna, olives and salad leaves. Season with salt, pepper and basil. Squeeze fresh lemon juice and drizzle olive oil.

Takes about 20 minutes and goes well with wine.

Sometimes what may seem like an obvious easy combination to one person may not be to another... bacon and toms is obvious, adding mayo isn't, but having seen the suggestion I can now imagine it'd work.

Sorry I didn't realise cooking bacon and tomato was just heating it. How have we not died of food poisoning already with merely warmed bacon? 😂😉

I forgot to say I cook the tomatoes with the bacon too.

Adding the mayo just stops the pasta being too dry and keeps the DC happy.

Much like adding pesto to pasta for a quick fix.

Anyway.. Keep the ideas coming. I'm always looking for simple stuff to save time 😊

Store cupboard curry
Chop an onion and 2 cloves garlic. Fry till soft
Add a large potato, peeled and chopped into 1 inch chunks (or a tin of potatoes), a tin of chickpeas, drained, and frozen spinach
Stir in a tablespoon of Pataks curry paste and fry gently for a few minutes
Add a tin of tomatoes, bring the heat up then simmer until potatoes are soft
Takes 20 minutes and improves the next day.
