Simple Meals You’ve Made Lately That You Love

I love pasta & could eat it every day. Last week I was going to an outdoor theatre performance & made a simple salad with cooled cooked penne, tuna in sunflower oil, sweetcorn, chunks of apple, mayo & loads of black pepper. Absolutely delicious!

Have you tried orzo pasta
Salmon fillet, peas and orzo (I just stir through the peas and teaspoon of butter and squeeze of lemon juice)

Or chicken fillet pan fried with salad and new potatoes (sprinkle herbs on the chicken)

Greek style flatbreads, with chicken that was marinated in yogurt and spices before being cooked, with a simple salad.

OP- Orzo is a tiny pasta which can be used in salads and soups. A bit bigger than a rice grain and a pointed, elliptical shape

  • Fig salad. Figs, pine nuts, spinach or rocket, blue cheese/feta or goats cheese, spring onions and either a splash of balsamic or balsamic glaze
  • Halloumi grilled, toasted pinenuts, green beans and watermelon chopped. That is all!
  • Baked potatoes with either home made coleslaw and/or tuna with mayonnaise and sweet corn

  • Brushetta. Panini grilled or toast at a push. Sprinkle of balsamic on the grilled bread, tomato, onion, basil, anchovies and italian herbs if no fresh ones available. Sprinkle of olive oil optional.

Also made a really lovely chicken salad that was cooked with peppercorns and star anise and the mixed with carrot, peppers, pak choi and a satay sauce - very easy and delicious. I added rice noodles.

Salad with those tiny Dew drop peppers, goats cheese and butterflied griddle pan cooked chicken that's been marinaded in garlic oil and some herbs, timeless, herbs, cucumber and radishes from the garden.
Less gastronomic but borne out of a Covid test the day I was meant to go food shopping, savoury vegetable rice with one of those little tins of tubs from Aldi with jalapeños in it, with salad actually very tasty!

I cook some orzo, add prawns to the pan, fry prawns in garlic oil and butter, squeeze half a lemon in, stir in the orzo and peas maybe with some cooking water. Black pepper and parsley if I have some. Gorgeous.

I like flatbreads with shop bought falafel (the gosh ones), hummus and chopped cucumber, tomato and red onion.

Boiled eggs and soldiers still one of my favourites too.

I used to make a light lunch of sliced vine ripened tomatoes, mozzarella, fresh basil, olive oil & black pepper with ciabatta bread. So lovely!

the lemon chicken upthread looks nice. But do you have to have part-boned chicken breasts for it? I don't think I've ever seen chicken breasts that aren't just boneless fillets in any of the supermarkets near me (admittedly not big ones)

Cooked spaghetti with some salted butter stired through, with brie, chopped spring onion and crispy salad onions! I also love scrambled eggs on buttered toast with a bit of salt on top
