Anyone up for a 'What's for Dinner' thread?!

I'm fed to the back teeth with heat waves, strikes (I support them, by the way!), corona virus and monkey pox, etc, etc!

So, as is my wont - my happy place is food.

We're having sweet and sour pork with fried rice, (one of DD2's new best meals) what's for dinner at yours?

Fridge picnic - so cold roast chicken, frittata, salad, cold meats, cheeses, olives. Followed by an amazing-looking chocolate brownie from the new bakery down the road.

I'm so envious of you all! I have no kitchen atm (being replastered, tiled and decorated), everything is disconnected apart from the fridge. I'm on an NHS diet to lose weight so can't order a takeaway. I may end up eating a few almonds or a yogurt 😢

Please can I come to one of your houses? I'll bring a smile, almonds and will do the washing up! 😆

Meatballs with rice, leftover from yesterday.

Yesterday we had Thai-style baked rice and sea bass, with a courgette and king prawn stir fry.

Tonight was supposed to be chicken burgers but I woke up at 4.00 AM and I feel absolutely shattered. Too tired to contemplate making fried chicken thighs...we’ll probably order a pizza which is a once or twice a year thing! I’ll probably poach the thighs and keep them for sandwiches/salad/soup.

Tomorrow I’m planning to do pork chops and a Tian Provençal, and possibly a mixed bean vinaigrette as well although I’m not sure we’ll need it. Depends how light we go for breakfast/lunch.

Haven’t planned any further than that!

We had pasta yesterday with the meatballs.

We’ve been out out for the day with my mum in law and the 12 week old so it’s pizzas! Pizza Express ones which were on offer at £2.50 each, but they are a little sad looking (they really don’t resemble the ones in the restaurants do they?!) so I’ve added some extra cheese etc to make them a little more tasty.

Cannot be arsed cooking today so it’s Supernoodles for me. DC have had cheese and crackers and a banana. They’re bugging me for ice cream so may have some too.

I will make a tiny bit more effort tomorrow and have a roast dinner though.

We are having spaghetti with tomato, garlic & bacon sauce with mozzarella on top. My son’s favourite meal and very quick and easy to make!

DH is out so I'm going to have crab cakes, in a saffron sauce, cherry tomatoes, rocket and fries with a glass of vino.

Love these threads! They always seem to pop up in my feed when I'm starving and have minimum energy levels though!

Have just mustered up the energy to peel and par boil some potatoes, DH making a cheese sauce and will layer up sliced potatoes with leftover gammon joint, broccoli, green beans & the cheese sauce.
Not exactly healthy but we are low on everything in the fridge and cupboard until the food shop!

Roast chicken with loads of herbs, garlic and lemon, roast potatoes with garlic, chilli and rosemary, steamed broccoli, peas and fried courgettes.

Pan fried salmon, fusilli with garlic, plum tomatoes and spinach , lots of olive oil ! Simple and yummy.

It's cold here today! I rifled through the freezer this morning and found some frozen beef short ribs, so I whacked them in the slow cooker and we've just had beef with crushed potatoes, carrots, onions and a pile of cabbage with some lovely gravy.

Feels ridiculous to be having it in mid summer but so tasty!

I made halloumi fries and tiger bread. Beige, but delicious!

Takeaway Carribbean is due at 8. I'm starving but DH only just got in from work.

Pasta with freshly shelled peas and Boursin stirred in. A lazy but delicious microwave meal!

@mbosnz what’s your recipe for sweet and sour pork? I think the kids would like that.

I got Gousto this week and I made the aubergine katsu curry. It used about 84 plates, bowls, and pans to make, and the final result was meh. I'm thinking of breaking open some chocolate.

Tonight was goat's cheese wrapped in bacon on a bed of courgette, carrot and beluga lentils with a lemon dressing.

Last night I had grilled octopus with garlic butter and a salad with mixed greens, tomatoes, beluga lentils, chopped pistachios, parmesan shavings and a fig mustard vinaigrette
