Egg sandwiches

Ok, so inspired my another thread but... on the sandwich fillings for party thread no one has mentioned egg! Surely egg sandwiches are the best bit of a party tea? I'm now fearing they will die out and become extinct. So the question, would you eat an egg sandwich? And would your children eat an egg sandwich?

I love eggs in every form. One of my favourites is an egg sandwich made with sliced hard-boiled egg (not too hard) sandwiched between bread spread with a mix of Hellmann's, mango chutney and a little chilli paste. My husband likes egg, Hellmann's and sliced cucumber (plenty of pepper and a little salt for seasoning). I do like cress but it has to be either watercress or proper mustard and cress, which seems to have disappeared from supermarkets. Ordinary cress tastes of nothing.

I only eat egg sandwiches if the eggs are freshly boiled. The bread needs to be white, buttered and the eggs sliced, bit of salt and pepper and a good snipping of cress

Egg sandwiches are brilliant. With butter, mayonnaise and cress or a crispy lettuce leaf. Preferably on brown bread.

101 ways with an egg.
We eat them as runny fried eggs but especially like our eggs Hong Kong style - essentially beat the egg first with added seasonings and fry the mixture in a non stick pan as one would when making an omelette. Once cooked serve in buttered bread and a dollop of brown or red - either is very good.

If I'm making guests a light lunch, I soft boil the eggs and the still runny yolk is the binding element to the cress, salt and pepper and what have you. Mash it all together keeping it chunky and it's absolutely delicious.

My mum used to make me egg finger rolls in my packed lunch. They were the best. No mayo, just boiled for five mins so quite soft, and mashed.

With a Breakaway for pudding.

Any kind of egg sandwich works for me although my absolute favourites are the salad sandwiches they make in hospital- buttered white bread, sliced egg, cucumber, iceberg and tomato.

I love them, as long as they are freshly made and cool. I went through a phase a child of having them every day for lunch but when summer came I realised how horrible they were when sitting in a bag for a few hours on a hot day. But freshly made at the local sandwich shop or by me, they are great - even better with tomato and bacon. But my DC won't eat them at all - mainly I think because they don't like mayo on anything.

Doesn't take long to make egg sandwiches. Boil a few eggs. Older eggs are much easier to peel than very fresh ones. The shell comes away in one, more or less. Put peeled eggs in a bowl with a bit of mayo or salad cream, seasoning etc, and roughly chop the eggs with a knife. Then spread on bread, put on lid, cut into little sandwiches.

Bloody love an egg sandwich, lots of Mayo, seasoning, cress optional but I do love it, bread buttered.
Our hens are in full laying season at the moment so I’m making it quite often. Ds is the only one who doesn’t like egg Mayo sandwiches.
My mum makes them with salad cream 🤢

I wish I hadn't opened this thread. I've just got in from choir practice, it's bedtime and I've now got a craving for an egg mayo sandwich....my absolute favourite filling. Got to be seasoned well with freshly ground pepper and salt though. Do like adding egg mayo to a smoked salmon sandwich as well.....

I also use 50% salad cream. Much nicer.

Pret have a poor excuse of an egg sandwich with only mayo, way too much black pepper, and huge chunks of egg white barely chopped up.

Egg mayo (and cress) is always the first veggie sandwich to disappear at work when we have a catered event. We never have any left to take home Sad

The best piece of kitchen equipment I’ve ever bought was an egg boiler (cost about £9, does 6 eggs perfectly and really quickly) - it’s in constant use.

I like roughly mashed eggs, with salad cream, white AND black pepper, then either a sprinkle of paprika, dash of tabasco or tiny bit of English mustard - has to be on thick, soft white bread with lots of butter. Or as a toast topper - again, has to be white bread though!

And even better with some home grown cress and mustard (which never happens because I keep forgetting to buy seeds) …

You're are lucky there are enough to eat, any veg options at work always get snaffled by the meat eaters first.Hmm
