What on Earth do I do with 7, yes SEVEN! aubergines?

I said yes when dd1 asked today if we could get a couple to try a new recipe with. What I didn't realise was; that she'd spotted the bowls of fruit & veggies at the front of the market stall, that were being sold off for the princely sum of £1, and had got the gent filling the bowls to decant them into her bag.

So, I now have seven flipping aubergines residing in my refridgerator, and plans for only two of them 🙄🤣

Any tasty suggestions for the other five? (Although, Google suggests they will be ok in there for a good few weeks & can be frozen as they are, so I suppose they'll not go to waste!).

I roast until they collapse, then freeze the flesh so that I can make it into dips.

also chop into chunks and roast, then freeze in portions. Chuck in curry, pasta sauce etc.

Grate them into any tomato based sauce eg bolognese. They disappear but add a depth of flavour.

Chop into cubes cover in honey, a bit of chilli, black pepper and olive oil and roast until a golden colour.

Cut the eggpplants up, roast on high heat for 20-25mins. Meanwhile chop onions and garlic and saute, then add tomato paste and fry off, then add tomato passata and simmer. Add the grilled eggplant to the sauce and cook for 5 more mins. Cook pasta and add to the sauce. It's a really meaty non-meat pasta dish. Oh and basil goes nicely in the sauce too if you have it. 5 eggplants with 2 passata packs and 700g pasta makes enough for 5 people plus some leftover.

My dad never, ever cooked. But when he did, he had 2 dishes.

  1. Vegetarian Sheesh kebabs
  2. Lasagne, without pasta. He used aubergines sliced lengthways as the the lasagne sheets. It was amazing

Slice them up and use them instead of lasagne pasta sheets for a lasagne. Quite tasty and lighter than traditional lasagne.

For some reason it’s not letting me add links. But look up Rosa thai aubergine stir fry - it’s delish. I add cashews.
