What on Earth do I do with 7, yes SEVEN! aubergines?

I said yes when dd1 asked today if we could get a couple to try a new recipe with. What I didn't realise was; that she'd spotted the bowls of fruit & veggies at the front of the market stall, that were being sold off for the princely sum of £1, and had got the gent filling the bowls to decant them into her bag.

So, I now have seven flipping aubergines residing in my refridgerator, and plans for only two of them 🙄🤣

Any tasty suggestions for the other five? (Although, Google suggests they will be ok in there for a good few weeks & can be frozen as they are, so I suppose they'll not go to waste!).

If youve got 3 hours then jamie ollivers ultimate veg lasagne from his comfort food book is really delicious. You could make double the sauce and freeze one portion.

@Herbyhippo what would you serve with them once roasted like that? She is quite keen on chilli flakes lately so that's likely to be one we try.

@Expectingfirstbaby that sounds amazing & she was on the hunt for a pasta dish to try next so I'll show her next time she pops down from her pit.

Strangely enough, though, she isn't keen on lasagne 🤷‍♀️

Was about to say deep fried with honey, served at our All inclusive in Majorca {it's not all chips and burgers, but that's another thread!) ours were discs rather than sticks, but amazing!!

Sicilian pasta with sliced aubergine 🍆 fried till golden then used to top spaghetti in a rich tomato sauce. 🍆 🍆
Sliced thinly, dipped in a tempura batter, fried and served as a starter with herby yoghurt on the side. 🍆 🍆 🍆
Aubergine 🍆 use as an ingredient in vegetable paella. 🍆 🍆 🍆

I had aubergine katsu for dinner tonight which was lush.

Personally I would have it with fish and stir fry - I love summer greens, onion, courgette and tomatoes, anything you have in but definitely lots of greens. With garlic and butter and maybe a bit of sumac if you have it in ( and Chili again if you like it). I don’t eat chicken but I think that would go too.
