What's your 'bung it in the oven' no effort dinner?

I asked for dinner advice yday and got so may lovely suggestions, so I'm back for more lol. Something quick and easy bung it in the oven no effort- what's your go to? Mine is usually a chicken, carrots and potato all cooked together and then add stock at the end to turn into a gravy. That's too much effort today though!

A traybake -
Whatever veg you have handy - so, baby potatoes, chunks of sweet potatoes/butternut squash/broccoli/courgettes/red onion wedges etc. Chuck into a baking tin with chicken chunks/drumsticks whatever. Rub with oil and Mediterranean seasoning. Finally, cut an orange into wedges, squeeze over the juice then throw the wedges into the tin with the veg. Bake until chicken is cooked. If needed, add more orange juice (from a carton/bottle). Serve with crusty bread.

My least effort is baked potatoes with salad and cheese. Easy and tasty.

GalaPie · 19/04/2022 19:00

I do a kind of rice bake.
Rice, veg, herbs, maybe some small pieces of diced meat. Fling it in a roasting tin, cover with a nice herby stock, double wrap in foil and chuck it in oven for an hour at 150 fan.
It's a combination of baked and steamed.

Roasted veg & fish/chicken/etc. Brilliant if seasoned properly!

Saucery · 19/04/2022 19:05

Chicken thighs, mushrooms, leeks, rice, in a casserole dish with bouillon or any other stock you use. Lid on, oven for an hour, keep eye on moisture and top up if needed.

BeyondMyWits · 19/04/2022 19:05

We had ready meals today.
DD19 had chicken and bacon pasta bake (at lunchtime as she is off out tonight).
DD21- veggie- had roasted veg lasagne
DH tuna pasta bake
Me - not overly keen on pasta - chicken and broccoli topped with mash.

All in oven, easy peasy. Tomorrow we will have vegetable chilli made from scratch, not quite so quick and easy.

golddustwomen · 19/04/2022 19:07

Lasagne is absolute effort Grin

My throw in the oven meal is quiche. Shop bought quiche. With a quick salad and microwave spicy rice.

Either the Hairy Bikers Spanish Traybake:
www.goodto.com/recipes/hairy-biker-s-spanish-style-chicken-bake
Chicken, garlic, chorizo, peppers, potatoes & paprika, it’s pretty good and tastes great for minimal effort.

Or I chop up some unpeeled potatoes, salt & oil them, bake them at 180 for 25 minutes and eat them with whatever we have around - usually chicken or fish.

I just like throwing things all in one tray in the oven really.

Loving the idea of Gnocchi in the oven & my soon to be student daughter loves Gnocchi more than I do, so I love the idea of getting an internet shop delivered with some of these ingredients :)

Onlyforcake · 19/04/2022 19:17

I'm definitely not suggesting cheese sauce from scratch. Breadcrumbs are kept in the freezer as is grated parmesan. Cheese sauce in a tub from tesco fresh pasta section.

Worryworry887 · 19/04/2022 19:19

Ready made Meatballs out of a packet, fried then add a couple of tins of chopped tomatoes, oregano, garlic salt (so no chopping garlic) or if you have it garlic Italian seasoning. Serve with spaghetti and garlic bread, grated cheese.

Worryworry887 · 19/04/2022 19:21

Also love the curry meal kits (E.g spice tailor) just add chicken and veg…minimal effort but feels like you’ve cooked a meal

DeedlessIndeed · 19/04/2022 19:22

Not in the oven, but superquick meal I love is a big steaming pot of udon.

Bring pre-made chicken stock (or even better - waitrose do a good dashi) to the boil.

Add a handful of frozen edamame and a pak choi cut in half length ways with a pair of scissors to the pot.

Wait about 4-5 mins.

Add a packet of soft udon, cooked chicken slices cut into strips (again with scissors) and a handful of beansprouts.

Wait 2 mins.

Serve. I like to add spring onions on top (also cut with scissors - can you see a theme) and sesame seeds with a dash of soy. Maybe some coriander too if I use chicken stock.

valerianaofficiana · 19/04/2022 19:23

Chuck cherry tomatoes, bonus points if on vine🥸 (as looks so arty) into oven dish; add good butchers sausages and few largish sprigs of rosemary. Toss with balsamic vinegar and olive oil. In oven for 35 or so min, turn the sausages mid-way. Serve with yup, crusty bread 😙 to mop up the juices and wine of choice.

PegasusReturns · 19/04/2022 19:24

I can make a cheese sauce in the time it takes to cook pasta. Although undoubtedly it’s more of a faff than an omelette

Roussette · 19/04/2022 19:26

Nice sausages
Tin of green lentils
New potatoes halved
Fresh herbs
Knorr Stock pot and some water

Into Le Creuset, bake till sausages brown and potatoes cooked

2bazookas · 19/04/2022 19:26

@Hollowtalk Is that the quickest one you cook?

It's my " quick and easy bung it in the oven no effort", which is what the OP asked for.

PopsicleHustler · 19/04/2022 19:27

Birds eye chicken char grills, mccain potato wedges, salad and coleslaw its fantastic

But then I also have started scrapping the wedges, boiling the baby potatoes, then when they are cooked covering them in olive oil and all purpose seasoning and nando salt. Fry for a few minutes and then put in the casserole dish for 30 to 40 minutes. Its unreal and so simple. With coleslaw its absolutely melt in your mouth. And 3 chicken char grills lol if am feeling greedy.

RinklyRomaine · 19/04/2022 19:30

Lemon 'carbonara'
Boil spaghetti
In a bowl mix a glug of olive oil, 2 egg yolks and one whole eggs, juice and zest of a lemon, good grating of Parmesan, lots of pepper and some pesto / basil, whatever
Don't drain pasta, lift it with tongs into bowl. Stir. Scoff.

Auntie S salmon
Smear salmon fillets with mayonnaise, sprinkle over a good spoonful of onion soup mix, then top with flaked almonds. Oven for 20 ish minutes. Weirdly delicious.
Microwave baby potatoes with a knob of butter, sprig of mint and splash of water for 8 minutes under cling film. Add frozen peas for the last minute.

Oven gnocchi
Make a paste of chicken stock cube and oil, rub on boneless thighs. Roast on a high heat for 30 mins.
After ten, chuck in a bag of long stem broccoli, bag of cherry tomatoes and a bag of gnocchi.
Dollop pesto on at the end.

ProfYaffle · 19/04/2022 19:30

I rate the Blue Dragon noodle kits. I usually have the Ramen and Pad Thai in the cupboard and frozen itsu dumplings in the freezer.

Dumpings + Ramen kit with added veg like julienne carrot, sugar snap peas, baby corn etc

Pad Thai kit plus frozen prawns and/or left over roast pork/chicken

Both really quick and tasty.

I'm also fond of fresh filled pasta with pesto (jazz it up with shaved parmesan, rocket and pine nuts over the top) and a garlic flatbread.

Borderterrierpuppy · 19/04/2022 19:36

Roast veg, halloumi tomatoes in oil done :)

Favouritefruits · 19/04/2022 19:39

M&S Kiev, rice, stir fried veg
Chicken omelette with crusty bread

sarahj878 · 19/04/2022 19:43

Loving this thread

CrepuscularCritter · 19/04/2022 19:45

Cook pasta, drain, reserving a little of the liquid. Add spinach until wilted, then stir in soft cheese, smoked salmon, some lemon and lots of black pepper.

Mandyjack · 19/04/2022 19:47

A tin of soup 😂
Or today we threw some chicken strips and spring rolls in the air fryer and did some microwave rice to go with it and opened a sachet of sweet and sour sauce. Quick and easy and cooks so quick in the air fryer
