What's your 'bung it in the oven' no effort dinner?

I asked for dinner advice yday and got so may lovely suggestions, so I'm back for more lol. Something quick and easy bung it in the oven no effort- what's your go to? Mine is usually a chicken, carrots and potato all cooked together and then add stock at the end to turn into a gravy. That's too much effort today though!

Chicken thighs with some herbs, maybe some citrus juice chucked over and put under the grill. If I'm feeling fancy I'll throw some asparagus in there. Generally served with salad or frozen peas.

Sometimes I will do chicken with paprika and black pepper with tomatoes onions sour cream. Serve with pancakes.

This is a great thread!

These are some of my easy dinners:

  • Ham and cheese quesadillas (toasted in a pan)
  • Fish cakes with tomato salad
  • Prawn and mushroom risotto (mix risotto rice, uncooked prawns, sliced mushrooms and peas in an oven proof container with boiling water and wait 30 mins - delicious!)

Toast it and add it n when it's hot. With a marmite layer between the toast and the cheese

juliebeds no the pork chops don't dry out. I put a bit of olive oil on the bottom of a roasting tin. Then the veg. Then the chops. I've a fan oven. I cover with tin foil but take the foil off near the end. I've a fan oven and keep it on a medium setting. The fat from the chops stops the food drying out.

Wee bit of chopping required but big chunks of potatoes, carrots, peppers, onions and chorizo. Big squeeze of fresh lemon. Shake around and bung in oven.

I've never eaten chicken thighs. Or wings. Watching them run round with little their scrawny legs... nah, can't face them!

Nachos. Buy nachos, Chuck salsa, cheese, jalapeños on top, heat in the oven, plonk sour cream on top.

Also lentil soup. I make it in the morning so there's nothing to do at dinner time but it only takes 5 minutes. Stick an onion and a carrot in the blender until in tiny pieces, put in saucepan, add water and 1/3 bag red lentils, couple of vegetable stock cubes and just cook it for an hour. So quick.

-Tortellini boiled for a couple of mins, stir some tomato and marscapone sauce and maybe some spinach in, topped with cheese and ovened for 10-15 mins

-Asda counter fresh pizza

-Aldi tuna pasta bake ready meal

-Quorn pieces, baby corn, egg noodles and black bean/korean bbq yo sushi sauce sachet

-Tiktok salmon rice - salmon, rice (I use the microwave tray rice because lazy. So much nicer than microwave pouches), soy sauce, sriracha and mayo all mushed together. Looks rank, tastes yum.

Biryani is great. I use a Dutch oven that can go from hob to stove. Add onions and veg to cook a bit, then add spices for a minute then stick and tomato paste, garlic, herbs etc and then rice, top on and in the oven for 30 mins. Lovely.

Pasta bake or lasagne. If I'm feeling a bit crazy I'll throw in a garlic flatbread for good measure!
Pasta bake is an absolute legend for using up left over veg or a MN chicken after you've had 3 nights dinners and massive salads from it.

For me - oven chips, fish fingers and baked beans.

Or Jamie Oliver chicken (prosciutto ham etc) for posh.

Or Turkish chicken pilau which is simpler than it sounds. Basically chicken pilau add chicken breasts chopped, red peppers, tomatoes, onions, saffron, cumin (I think?) currants, aubergine, boil it up up with bouillon or chicken stock and I think small amount mild curry powder and garlic. Then serve with Greek yogurt and/or garlic bread. I’ll add timings if anyone wants.

@Gonnagetgoing could you post the recipe for the Turkish pilau please. Should it have rice in it?

TBH the oven uses a lot of electricity so I'm trying to stick to things I can cook without using it. I've always used the slow cooker for soups and stews - soups are all pretty easy - I use the WI book on soups - 99p from a charity shop - it's excellent.

Sausages, its the first night in a caravan meal too. Usually get some nice ones on the way and throw on a tray with onions, potatoes and apples. Herbs if you want to, a splash of oil, all done.

Chicken bake - dice up 2 chicken breasts, put them in a casserole dish, chopped onion, tin of chopped tomatoes, some paprika, mixed herbs, salt and pepper. Cook for about 45 mins on gas mark 5, stir half way through then add a tin of potatoes and put back in the oven for 15-20 minutes. Then serve.

cheese and ham pasta - cook your pasta, drain and stir in Philadelphia cheese (I use the lightest one) and diced cooked ham. Then serve

I like taking a fish finger sandwich to a new level. Cook potato waffles and your fish fingers. Let your waffles cool slightly and top with a bit of cheese (or cheese slice) melt them under the grill and assemble your fish finger sandwich and enjoy!

My easy dinner is kebabs from Iceland. £3 a pack for 4 and you can get tandoori, bbq and I think garlicky herb ones. 20 mins in oven serve with salad, tziki and flatbread

Chicken breasts, cover in a generous amount of green pesto.Put it in the oven for 30 mins take it out - put in loads of roughly chopped tomatoes, sprinkling of basil finish off with grated mozarella and cook for another 20 mins or so.
soooo easy but v good.

Add some peas half way through cooking pasta, drain and add a flaked pre-cooked salmon fillet and a jar of pesto 👌
