What's your 'bung it in the oven' no effort dinner?

I asked for dinner advice yday and got so may lovely suggestions, so I'm back for more lol. Something quick and easy bung it in the oven no effort- what's your go to? Mine is usually a chicken, carrots and potato all cooked together and then add stock at the end to turn into a gravy. That's too much effort today though!

This is a great thread.

If you have ready done mashed potato, Jamies best fish pie really is very quick and simple. No white sauce and absolutely delicious. It's a bit of grating and assembly.

I do the foil baked salmon with veg and some form of chicken traybake with veg, frequently!

Microwave rice with a veg curry (which can be as easy as you want it to be if you have the spices, chuck veg and lentils together and just bung in oven for 30 mins) and it lasts days!

Or beans on toast, can't beat that.

@Pegasussnail this sounds nice but do the pork chops dry out during a 50 minutes in the oven? Do you cover them? How do you stop them from drying out? What temperature?

My easy, no effort meal is pasta and pesto.
My 'honestly can't even be bothered cooking pasta' meal is fish and chips bunged in the oven.

Vegetable fajitas

Chickpeas, butternut squash, peppers, onions cut up, splash of oil and throw in fajita mix.

20 mins in oven, then self serve onto Tortilla wraps, adding any sour cream or salsa. Delicious

Sausage salad - a bag of baby potatoes, plus sausages, peepers and onions all in bite sized chunks. Oil and season. Chuck in the oven until cooked. Sometimes throw in cherry tomatoes ten minutes before the end. Serve on a bed of whatever salad leaves you have. Dress with garlic Mayo/yogurt.

Prawn feta thing - garlic, frozen onion and frozen peppers into a tin. Tin of tomatoes. Chilli flakes/fresh chilli to your taste. Heat through. Towards end Chuck in prawns and feta until pawns are just cooked. I’d probably warm crusty bread to go with it.

Forgot to add my quick, and cheap meal.

Fry some already sliced or chopped chorizo til the oil runs add tin of tomatoes and if you want a tin of chickpeas drained

Oooo just remembered. Fry chicken, peppers and add a bit of thyme. Then stir in creme freche with plenty of grated cheese, serve with pasta. A variation on this is bake sausages cut up, then add red onion, mushrooms and bake a bit more then stir in the creme freche and grated cheese mixture with cooked pasta and more grated cheese on top. Another favourite is garlic and herb Philly (or equivalent) with smoked salmon, rocket, lemon juice served with pasta.

I had a cheese sandwich and side salad tonight as dc's had been fed at their dads and I couldnt be bothered.

But quick dinner wise will do pesto and pasta.

Try not to use the oven too much.

My partner gets the small Bake At Home baguettes, pops a couple of meatballs in (either freshly cooked homemade or more-his-taste-than-mine... from a tin) and melts cheese on, with Lloyd Grossman Chilli and Tomato Pasta Sauce poured over. Takes no time at all and tastes sooo nice!

I usually use a carton of passata or a tin of chopped tomatoes, and don't bother peeling the spuds. Needs a long time in the oven but not much prep. Lovely with some hummus and bread. www.allrecipes.com/recipe/259870/briam-greek-baked-zucchini-and-potatoes/

Not sure if you're talking entertaining.
If just me, ill or exhausted or need to shop frozen pizza with any salad or beans. Or really lazy on its own.
Always have trusty fish fingers and other fish in freezer and very quick to do potato wedges for homemade fish and chips with battered cod, fingers.
Frozen salmon healthier option. Place on foil, add olive oil, garlic paste, lemon juice. Wrap in foil.
Add oil and baby potatoes plus any other veg, toss. Cook.
Have frozen batch cooked casseroles, green curries etc but not always defrosted in time.
Tbh a few less than healthy meals eg pizza won't kill you if diet is usually healthy.

Veggie soup. Fill medium large saucepan with water, chuck in 1 large sliced carrot, 1 large diced potato, one sliced stick of celery if you have it and some dried mixed herbs. Bring to boil and add 4 vegetable oxo cubes and some pepper. Turn down to simmer. Leave it to it for about 20 minutes or until the potato is cooked.

Not much washing up after either.

Jeez, that's quite a lot of salt. Grin

This pulled beef. It takes a loooong time in the oven, but you just bung it in and leave it there, then shred it into the sauce. I serve it with rice, shredded lettuce, grated cheese and soured cream in burritos
rather than the taco bowls suggested. Recipe here

For me - oven chips, fish fingers and baked beans.

Or Jamie Oliver chicken (prosciutto ham etc) for posh.

Or Turkish chicken pilau which is simpler than it sounds. Basically chicken pilau add chicken breasts chopped, red peppers, tomatoes, onions, saffron, cumin (I think?) currants, aubergine, boil it up up with bouillon or chicken stock and I think small amount mild curry powder and garlic. Then serve with Greek yogurt and/or garlic bread. I’ll add timings if anyone wants.

Salmon pasta and pesto here….poach salmon in the microwave while pasta is cooking, mix through the cooked pasta with a dollop of pesto
I do this too, but with a tin of tuna, drained, instead of salmon.

My boys love basic 20p noodles with peas and ham cubes chucked in the sauce.

I also do chicken thighs from the freezer with Mediterranean veg and halloumi, garlic and herbs chucked on. Put my feet up for 40 mins.

I get a chicken and cover it in a bottle of cheapo aldi barbeque sauce. Roast it and have jacket potatoes and salad with it. Soo simple and the chicken comes out lovely.

The lazy bang in the oven recipe that hits all the macronutrients group without being too difficult is my fav Baked Chicken Rice.

Get a packet of frozen ready marinated chicken (bbq is my fav). Fry frozen chicken in a pot with two tablespoons of oil. Add dry rice and fry together for a couple of bin. Rice should be lightly toasted. Deglaze with white wine, wait till alcohol evaporates then add boiling water just enough to cover everything. In the oven at 160C for at least 15 min.
Serve with boiled veg.
Add a bay leaf if you are feeling sophisticated.
