I do veg based & add pearl barley and butter beans or lentils

Atora does a veggie friendly dumpling 'suet', I use it all the time! Usuallly with a meat substitute & veg, but sometimes just veg. I LOVE dumplings!

We've got veg and kidney bean enchiladas tonight.
This week we'll have:
Chickpea bowl with pita and mint garlic dip.
Paneer in a coconut sauce.
Sweet potato burgers.
Roast veg gnochi

Tonight it was a chickpea and vegetable curry. Delicious.
For the rest of the week:
Black bean layered salad bowl with oven-baked potato wedges, marinated tofu, and pickles.
Pasta with a spicy green lentil & red bell pepper sauce.
Black bean & vegetable turmeric fried rice.
Green lentil chili & rice.
Walnut & lentil nut roast.

We've just had crispy Chipotle cauliflower tacos, with refried beans, guacamole and a lime/ coriander dressing. It was fab.

The cauliflower was from a trsco recipe. DP did the beans - Black beans, onion, garlic, loads of coriander, chilli, salt, cumin, lime I think. And a made up sauce - mayo, coriander, lime loosen with a little water. Bought guacamole, shredded lettuce, crispy taco shells

I should have said I don’t put any wine or chilli in the veggie shepherds pie recipe I mentioned above. I just use extra stock instead of the wine.

This aubergine chilli is lovely - but only use half the stock it suggests. You can buy jars of roast aubergine mush from world food type stores, so you don’t have to faff about with the aubergine.

I'm making a BBC recipe for gigantes with tomatoes and greens for myself and a friend on Wednesday, the photo makes it look delicious! Will get a good baguette to go with it.
