Gnocchi and spicy tomato sauce
Veggie burgers, corn on the cob and coleslaw
Thai veggie stir fry
Mushroom stroganoff and rice/broccoli
Pea and mint soup with cheese toasties.

Do you have an instant pot, OP? If so and if you like Indian food, there are some great recipes on this site. My favourites are pav bhaji, toor daal, khichdi, dal makhani.

I have a pressure cooker yes, I made a delicious mushroom risotto in it last week.

I also LOVE Indian food so will check them out thank you.

Mac and cheese with chipotle pasta, peppers, onions and kale mixed in. Lush.

Spinach and ricotta ravioli

Spicy Brazilian stew with rice (lots of black beans, sweet potato, peppers etc).

Bean chill con carne (con frijoles I guess).

Then probably some kind of leftover vegetable roast. We just chop and roast anything leftover with herbs and spices and some roast potatoes.

We've had bean burgers and coleslaw with sweet pot wedges tonight. Tomorrow will be veg bol and linguine.

Last night was veg lasagne and garlic bread.
Tonight was kefte and eggs made with lentil meatballs, Moroccan carrots and flatbread.
Tomorrow: aloo gobi, daal, chana pilau.
Wednesday: Sea bass (I'm pescatarian not veggie), roast fennel and peas, mashed potatoes.
Thursday: ? I was meant to be out but I've got Covid so it's unlikely.
Friday: Afghan carrot stew, bolani (stuffed potato bread).

I made spag bog today with quorn for the first time but it tastes kind of mushy and not great :(

Tonight was a chickpea and Mediterranean veg stew with halloumi. This week we'll also have:

Breakfast casserole
Paneer and spinach curry
Veg biryani to use up the leftover rice
Satay noodles and gyoza (frozen itsu ones) with whatever veg is in the fridge.
We're out for pizza Saturday and will have a roast on Sunday with cauliflower cheese as the main part.

Spicy numbing hot pot
Three types of mushroom and braised tofu with sticky rice
Sweet chilli sticky tofu

Coming up..
Terriaki Tempeh
Nachos with beans, guacamole and lots of cheese
A meze from the greek inspired selection currently available at Lidl (I'm looking forward to that one!)
Veggie Burgers and sweet potato fries (the frozen kind..)

This is very easy, if you Google Lebanese moussaka you will get a recipe although it isn't moussaka. Just roast aubergine then add to a standard onion, tomato type base with red pepper and smoked paprika then chickpeas. Really filling and nice
