Stilton! So much Stilton …

Yesterday I received a very large cheese hamper as a gift . It contains lots of “ artisan “ cheese as well as a HUGE pot of Stilton and a round of Camembert .

I usually don’t venture beyond a bit of cathedral city so this is a left field gift for me !
I don’t usually like “ smelly “ cheese but I’m going to try to cook with the Stilton .
And tbh I’ve no clue what to do with Camembert!

I’d really appreciate recipe ideas for the smelly cheese please!! My cooking skills are top end of basic , finances are middle budget and the recipes are for three adults .

Stilton is also lovely as a cheesy mushroom sauce. Fry some mushrooms and garlic, add some cream and blue cheese, let it all warm through and then pour over pasta or a nice steak.

We make a great macaroni cheese with all our leftover cheese around end of Jan/beginning of Feb every year. Including Stilton.

With bacon/lardons/pancetta/whatever you happen to have added into it as well, along with mustard and jalapeños.

I've just eaten a stilton and fig chutney toasted sandwich for lunch. It was absolutely delicious.

Filling for stuffed mushrooms, inside a chicken breast fillet , a little bit beaten into mash.

Freeze what you can't eat. You can cook with it from the freezer.

A warm salad with Stilton and poached pear is also another one 👍

Not my thread but oooh both of those sound good! I’m a big cheese fan so off find and clean the toasty maker Grin

Brocolli and Stilton soup, just boil brocolli and onion in veg stock then blend and crumble in the Stilton as you blitz it. I think it should freeze ok.
Char the broccoli stems in butter as the first stage.

Watch carefully and add the remaining florets and stock once you get the caramel nutty smell coming off the stalks and the browning.

Blend using stick blender. Crumble in Stilton to taste at the end.

It's divine.

I make a super easy sauce of melted Stilton (just shove some in a bowl and microwave) then mix with sliced mushrooms fried in garlic butter until they’re golden. Mix together and have on a jacket potato with a green salad in balsamic vinegar.

About 2086457 calories but sooooooo lovely.

Stilton goes really well on a Cajun spiced burger too. I love them.
And it goes into gravy for beef nicely with some port.

We’ve just finished the last of our Stilton the other day and now I’m hankering for some more! Just plain, on crackers, with a glass or two of port or sherry.

Have got some aged Gouda, gruyere and cheddar to get through, though, so all is not lost when it comes to cheese! Grin

I've been eating grilled Camembert and cranberry sauce sandwiches for several days now. I'll be sad when it's all gone.

If you have walnuts and dried cranberries they go very well with baked Camembert. Cut a cross in it, stud with garlic and thyme, drizzle plenty of honey over. Serve with crusty bread and/or grissini, olives and salami if you like.

Don’t cook it too hot (or too long!) or it will ruin it.

Stilton, pear, walnut and rocket sandwiches are lovely. Bake the camembert whole.

If your DH is a meat lover, this will work!

Sausage and Stilton Plait

8 good quality pork sausages
1 large apple
6 large mushrooms
150g stilton
Packet of puff pastry
1 beaten egg

Take the skin off the sausages and mix the meat in a bowl with the diced apple and mushrooms and crumbled Stilton.

Roll out the pastry to a large rectangle, place the filling down the middle. Make horizontal cuts in the pastry about an inch apart, brush it with egg, fold in the top and bottom ends then criss cross the sides alternately to make a plait.

Brush with egg and bake at 180 for 40 minutes.

It's lovely hot or cold.
