Stilton! So much Stilton …

Yesterday I received a very large cheese hamper as a gift . It contains lots of “ artisan “ cheese as well as a HUGE pot of Stilton and a round of Camembert .

I usually don’t venture beyond a bit of cathedral city so this is a left field gift for me !
I don’t usually like “ smelly “ cheese but I’m going to try to cook with the Stilton .
And tbh I’ve no clue what to do with Camembert!

I’d really appreciate recipe ideas for the smelly cheese please!! My cooking skills are top end of basic , finances are middle budget and the recipes are for three adults .

Tiny cubes of both in soup are amazing - Camembert in tomato-based soup & Stilton in broccoli soup as the others said.

My version of the pasta thing goes like this:
Fry onion & garlic in olive oil. Add chopped green veg, broccoli or kale, Brussels sprouts are awesome! Add dried rosemary, a handful of walnuts & a ladleful of pasta water. Let it bubble away. Add the pasta and the Stilton in cubes. For meat eaters, I add streaky bacon and make it go crisp.

Don’t underestimate how much blue cheese you can get through with this dish. It’s more of a vehicle for the cheese!

Blue cheese also goes well with dates and honey. My favourite is through soup.

You can also make blue cheese & spinach lasagne mmmm….

Try a bit as cheese and biscuits. You might like it.

Camembert can be eaten uncooked. Good with fruity things like cranberry sauce or chutney in a sandwich.

Stilton is great in soup - broccoli and Stilton is good. Also good in a salad with pears and walnuts.

I made a cauliflower cheese on Sunday and used Stilton in the cheese sauce.
Stuffed mushrooms.
Stilton in chicken breast wrapped in Parma ham.
You can cut the Camembert into wedges, toss in bread crumbs and deep fry. Dip in cranberry sauce.
Also, heat in the oven with chutney and dip in warm crusty bread.

Do you know any cheese lovers? I have a friend who often shares her annual gift hamper as she can't manage it all. Or invite friends round for cheese and biscuits? You need some grapes or nice apple to go alongside.

You can also use camembert as a replacement for reblochon in tartiflette.

Essentially:

Thinishly slice potatoes and par boil them.

In the intervening period fry bacon and onion or shallot, adding garlic at the end. Add white wine to hot pan to get all the juices up.

Layer drained potatoes and the onion bacon mix in an oven proof dish, pour over double cream. Season.

Half a reblochon (or sub a camembert) so it makes two circles and put it on the top, rind up.

Bake til golden brown.

Not all Camembert bakes well, you need one made from unpasteurised milk for the best results. Have a look at the cheese information to find out what type of milk yours is made from, if your Camembert is “fabrique en Normandie” it is probably made with pasteurised milk, and won’t bake well.
Although baked Camembert is very popular, nothing beats eating an uncooked slightly soft ripe Camembert with fresh baguette and a glass of vin rouge! Wine Wine

Camembert is much more delicious than Stilton. Bake that baby and dip things in it. You need cranberry sauce or some sort of chutney too. Bloody love camembert. Could also breadcrumb and deep fry it if you really hate your health Grin

For Mac Cheese
Have pasta al dente then layer pasta , grated cheese (in excess) and with cream, butter , mustard powder and white pepper.

Oh if you can get hold of some fresh figs, make a quiche with halved figs placed cut side up and cubes of stilton all around. Lush.

Stilton and butternut squash risotto or pasta is amazing. The salty savouriness sets off the sweet squash so well.

Try a smoked bacon and Stilton toasted sandwich 👍

I love Camembert, just baked in the oven with crusty bread dipped in. Or as a toasted cheese sandwich with bacon and cranberry. Personally I’m not a fan of blue cheese but my husband loves a macaroni cheese made with Stilton, or a quiche.

Stilton stuffed inside chicken breast with bacon wrapped round is lovely I don't like it not Cooked
I warmed a camenbert last night didn't have any rolls but garlic bread so cooked that too and dipped in Smile

So I’ve got a pasta bake cooking in the oven … I’ve used fresh pasta , garlic , leeks , mushrooms , broccoli , spinach , chicken , cream and some Stilton … so I’ll see!!

I might make soup later if I like the taste of the pasta .

I love Stilton in a sandwich with roasted peppers or thin slices of apple, delicious. Also on top of cooked mushrooms on toast.
