What's your favourite healthy meal?

Please help me find some ideas! I realised I'm having the same meals every week and I want to encourage myself and my family to eat better but when I flick through recipe sites, nothing seems to take my fancy.

What's your go to mid-week healthy dinner? I'm fed up with spag bol 😂

DD13 is really into making buddha bowls at the moment - which suits me cos they're quick, easy and healthy.
We also do salmon, potatoes and veg alot.
Homemade fish cakes.
Chicken fajitas

Dahl (made of lentils). I tried it in the slow cooker this week and it was great. I do confess I like it with naan bread which lowers the healthiness a bit! Grin

Lamb skewers made with neck fillet, peppers and tomatoes - probably an environmental disaster though
Greek salad, trouble is i can eat about a ton of it

I love the flavours of lemon, garlic and rosemary and basically use it for everything- perfect for chicken and lamb.

My ‘dustbin’ soup (my mother’s term).

Largely an autumn/winter thing, but loads of whatever veggies I have, plus red lentils/pearl barley/both - all green veg added for just the last 3 or so minutes.
Very substantial, and typically contain at least 10 plant items.

Chicken thighs tray bake - you can use whatever you want but we often do chicken thighs with courgette, peppers, red onions and some smoked paprika and chilli powder.

Tuna and rice salad- can of tuna mixed with rice, and literally whatever mix of veg/salad you want (sweetcorn, peas, grated carrot, tomatoes etc) mixed with a little bit of Mayo and black pepper.

Big omelette- I like it with spinach, mushroom, ham and cheese but again whatever you want.

Homemade ramen - instant dashi stock in a pan, add a crushed garlic clove and a bit of minced ginger. Leave to simmer while you chop the veg. Finely slice carrots, chop broccoli. Chuck in the pot, cook for about 4 mins.
In a separate pot you cook your noodles (dried or fresh but not instant, I quite like udon ones).
We usually have tofu (chop into squares and put in the pot with the veg, or you can buy the ready flavoured stuff that comes in bits) or you can plop a couple of whisked eggs in the veg pan when it's done (like egg drop soup).
Then put everything together in a big bowl. You can stir in some miso too and/or add chilli oil at the table. Takes less than 20 mins, is delicious and healthy.

Tofu stir fry is always quick, easy and loved by everyone here.

Easy to make with rice or noodles and chop and change vegetables.

Rice and lentils - either as dal or as lentil bolognese
Miso soup with vegetables, served over noodles or rice
Thai red vegetable curry, done either as a curry or a soup
Deconstructed vegetable sushi - I make little cones then eat the rest of the rice & veg with chopsticks once the nori seaweed is finished.
Homemade soup - minestrone, leek & potato, mushroom, butternut squash & sage
A massive salad! Grin I do a great salad with all sorts of things in it.
Tomato rice (google it) with black rice vinegar & soy sauce, with extra veg
Leek & mushroom risotto with tarragon & white wine

Before I was vegan I liked cawl
Salmon steamed with new potatoes & broccoli.
Baked potato with lamb, green vegetables & gravy

These all sound amazing! There have been a few suggestions of tofu and I've never tried it as I've heard it's difficult to get right. Is there a certain way I need to season/cook it?

something I discovered by chance one time and found it absolutely delicious! brown rice dyed yellow with some tumeric. You boil whatever veggies you want to add (those frozen bags of like peas carrots and sweetcorn are fine) you mix them into the cooked rice. Then you add in half a tub of caramelised onion hummous and half a tub of salsa. Its so creamy and tasty plus vegan! Im only not making it atm because I have terrible IBS and Im afraid that it will upset it.

today I had uncle bens wholegrain chicken rice (was abit bland next time ill add some chicken stock), 3 airfried chicken sausages cut up(only 156 calories 2 tesco pork ones are 277!), boiled sweetcorn, 8 airfried cherry tomatoes and a light coating of finely grated extra mature cheese

I also recommend 2 minute microwave rice (I use either brown or aldis brown rice and quinoa), a tin of mackeral in oil, boiled veggies, diced raw cucumber. Boil your veggies, mic the rice, pour the whole tin of fish into the rice and veggies including the oil (my mum rates the tomato sauce ones instead) mix the lot together with some generous salt seasoning and then add the chopped cucumber on top
