What's your favourite healthy meal?

Please help me find some ideas! I realised I'm having the same meals every week and I want to encourage myself and my family to eat better but when I flick through recipe sites, nothing seems to take my fancy.

What's your go to mid-week healthy dinner? I'm fed up with spag bol 😂

Spinach, cucumber, warm sweet potato, red onion and tuna salad. With my secret recipe dressing (maple, mustard, olive oil and white wine vinegar)

Roast kale. I love it so much. Buy a big bag of kale, wash it and dry it,. Toss it in a dessertspoon of sesame oil with garlic granules, sea salt crystals and chilli flakes. Bake in oven for about 30 mins until it is crispy. Had it tonight with mashed sweet potato and roast herby chicken.

something I discovered by chance one time and found it absolutely delicious! brown rice dyed yellow with some tumeric. You boil whatever veggies you want to add (those frozen bags of like peas carrots and sweetcorn are fine) you mix them into the cooked rice. Then you add in half a tub of caramelised onion hummous and half a tub of salsa. Its so creamy and tasty plus vegan! Im only not making it atm because I have terrible IBS and Im afraid that it will upset it.
Read up about FODMAPS, as it's possibly the onion and chickpeas as well as peas which are the likely irritants.

yeah I know thats why I said Ive avoided it because I know the hummus especially being onion is a FODMAP. I normally brave it but FODMAPS are kicking my butt whilst im pregnant Im taking peppermint capsules to try and help sometimes they work sometimes they dont

For healthy I love soup. I used to eat soup every day! I'm a little more scattered now that I have a baby. Some healthy recipes (and my favorite tofu recipes) below. We like veggie burgers a lot too. If you make spag bol often why not replace the bolognese with roasted veggies (just clear out the fridge) and evoo and parm.

Home-made doner kebab with yogurt sauce, tomato & onion salad and shredded red cabbage. Kids make wraps with it, but I just chuck the chilli sauce over it and eat with a fork.

@Houseofvelour we get the Tofoo brand from Tesco, it’s an extra-firm style so good for stir fries. Cut into cubes, Marinate in a bit of soy sauce, sesame oil, a little honey and some chili sauce, then either oven bake or stir fry. Dead easy and delicious!

Butternut squash tacos - roast squash chunks and seeds with chipotle chilli flakes, add salsa / guacamole etc
Grilled salmon, stir fried greens with plenty of chilli / garlic / ginger and rice

Doner kebab:- Minced lamb, paprika, cumin, chilli pepper, white pepper, salt, oregano, powdered onion, garlic powder. Maybe a desert spoonful of each spice (less of the white pepper). Blitz it all together, wrap in foil into sausage shape and bake 30 mins. Chill in fridge or freezer, then slice and fry for just half a minute or so to serve.

I was just thinking these are just regular meals!

I guess it depends on your definition of healthy. Mine’s very strict because I’ve been paleo, vegan, raw.. and read far too much about what different foods do! I think most people go by the classic food pyramid we’re taught in school.

Me too @FabriqueBelgique! I’ve spent a lot of my life with health issues & trying to sort them out via natural means, i.e. figuring out my trigger foods. So many foods make me ill & loads of others just sound repulsive now that I know what they do to the body! I’m perfectly happy on a more natural diet & feel a lot healthier anyway.

Yep, that was my reason too! Psoriasis in particular but I’m also very interested in the connection between food and mental health.
