Chicken pie recipes

I'd love to be able to make a really tasty chicken pie. I think at the moment I can make a bang average chicken pie- white sauce, leeks, few veggies, chicken, puff pastry top. It's OKAY but it isn't really GOOD, and that's what I'd like to be able to make.

Does anyone have a recipe for a not-too-time-consuming but delicious chicken pie, please?

Ah interesting- I always assume chicken pie needs a white sauce. Do you make your own gravy when making the original roast and keep some back?

I think you need bacon in it. I don't follow a recipe as such but this my vague chicken pie:

Chop up some chicken thigh fillets, fry them off until nice and golden, put to one side. Fry a few chopped bacon rashers in the same pan with a chopped leek in about a tbs butter, when it's got a bit of colour add tbs flour, let it cook out then add a good slosh of milk to make the white sauce. Add about the same amount of chicken stock (maybe about 100 ml of each but I do it by eye). Add the chicken back in and simmer for about half hour. I then add a few handfuls of spinach for veg value. Sometimes I use shortcrust and blind bake the base before putting the mixture in and putting a lid on, if I'm being lazy I just use a puff pastry lid.

Gently fry onions / leeks / celery until soft. Add flour, stir, gradually add stock (I use Bouillon for the flavour) and then milk. When thick, add whole grain mustard and leftover cooked chicken. For extra flavour, add leftover gammon or lardons.

I do something similar to AnUnlikelyCombination except no milk, as we arent a great dairy consuming house.
And in order not to over cook the chicken, I cook the pastry separately, cut into individual servings, on a baking tray, the serve by putting the chicken mixture on the plate, and adding the cooked disk of puffed pastry.

A glug of white wine, fresh thyme or tarragon, carrots and celery,bit of mustard help with either white sauce or gravy. If I don't have gravy over to make pie I use Bisto Best.

@InTheLabyrinth As it happens, I use non dairy milk (soya or oat, doesn’t matter), and it works well. I think mostly it comes out a nicer colour rather than doing much to the flavour, though.

Hairy Bikers do a really nice chicken and ham one with scrunched up filo pastry on top. Hungry just thinking about it.

I made a chicken, bacon and leek pie with a suet crust, which was amazing. Fried off the chicken, bacon, leeks, a little dried thyme, paprika etc, with loads of butter, then added a couple of tablespoons of flour, chicken stock, whacked it all in a pie dish, made the suet pastry, covered the pie, cooked it in the oven for the first 20 mins covered loosely in foil, then removed the foil for the last 10 mins to crisp the crust slightly. 😋

I make one where you fry off leeks and bacon (in butter) add to shredded left over roast chicken, make a white wine sauce and top with puff pasty. It’s really good.

I really like Jamie O’s from 30minute meals. It has mushrooms, spring onion, creme fraiche, mustard and stock as the sauce and ready made puff pastry plopped on the top. And is done in under 30 mins!

Jamie Oliver’s chicken and leek pie. It has sausage meat balls in it which sounds random but is a great pie

I think bacon, mushrooms and a bit of whole grain mustard make it special
I made one the other week which wasn't really a pie as I put mash on top, and used ranch seasoning and was delicious

I second Jamie Oliver's 30 minute Chicken and mushroom pie. It is really tasty and loved by everyone I've made it for. It works with filo, shortcrust or puff pastry top.

Quite simply, I reckon you need a decent thick tasty gravy in there rather than a white sauce.

For anyone too lazy to make one, the M&S ones are pretty good Wink

I make a chicken pie quite regularly which everyone in the house loves. An onion and garlic fried for a bit. Add chicken (if it's raw, if not just add it when adding the veg at the end ), cook for a few more minutes. Put in a bit of flour and then add milk slowly until it's thickened and saucy enough for the pie. Add dijon mustard, dried tarragon and usually a dollop of some sort of sweet condiment like onion marmalade or something. Sometimes I add sweetcorn or broccoli. Shove it all in an oven dish and top with jus roll puff pastry. Oven for about 20 mins until the pastry is done. Delish!

Chicken breast, lardons, button mushrooms, onion, two cans condensed cream of mushroom soup, frozen mixed veg. The soup and frozen veg are essential.

I cook my chicken in the oven, then shred it. I fry leeks and some pancetta then add the chicken and add chicken gravy and simmer for 15 minutes. I just do pastry as a topper. I’d love to put in chorizo, but other family members aren’t keen.

My chicken pie is cooked chicken, fried onions, then mix in one tin of Campbell’s chicken soup and one tin of Campbell’s mushroom soup, and jus roll puff pastry. Confused Now I feel like a lazy bitch! Although the family like it!

If you are doing a white sauce then adding a bit of cream as well as milk makes it richer, and tarragon goes nicely with it too. Especially if you have mushrooms and garlic in your sauce 😋
