Chicken pie recipes

I'd love to be able to make a really tasty chicken pie. I think at the moment I can make a bang average chicken pie- white sauce, leeks, few veggies, chicken, puff pastry top. It's OKAY but it isn't really GOOD, and that's what I'd like to be able to make.

Does anyone have a recipe for a not-too-time-consuming but delicious chicken pie, please?

Adding mushrooms and sweet corn makes a huge difference to a white sauce I’ve found

I boil my chicken with carrots and leeks till only just cooked, slightly raw is ok. Remove chicken from bones and put in dish with carrots and leeks, add peas if you like. Fry off bacon lardons and add. Make a sauce, butter, flour and use the water from chicken, add some milk if you want to but not needed. Use left over stock to make a soup. Leave pie middle to cool, add your favourite pastry on top. We sometimes make a short crust, or buy filo or puff. I dont really time or measure anything but is def a family favourite and they will always eat the veg as it's in the sauce.

I actually put my chicken back in the fridge and did beans on toast for tea- didn't realise there would be so many answers Grinwill report back tomorrow!

Start by frying lardons, chopped celery, chopped carrot and leeks in olive oil (and onions if no leeks, short of leeks) til the lardons give off fat and the veg are softening. Then add flour to take up the fat and juices, and make a bit of a roux. I then stir in a glug of vermouth or white wine, and then stock to make a thickish sauce. Once I'm happy with the consistency of the sauce, I add mushrooms, the meat pulled off a roast chicken, tinned sweetcorn and wilt some spinach or cavalo nero into the mix. I season it, maybe with oregano, a dash of soy etc. I let it cool for a bit,then put in a pie dish/ tin, and top with scrunched up fill, brushed with either melted butter or some olive oil. Apply to oven.

I do this in a big batch from the meat left over from the turkey every year, so I have pie mix in the freezer for when I want it.

I might add creme fraiche to the sauce or milk if I want it creamer. Cider works instead of vermouth/wine. I might add chilli flakes or bay leaves.

It also works topped with thinly sliced potatoes,or puff pastry.

It’s probably frowned upon but I use a can of Batchelors condensed chicken soup as the sauce and do it with chicken, leeks and bacon.
